And although I already had the answer of this question, I decided to conduct this experiment at home too…
Saturday morning… it’s the time when I mostly spend brewing delicious coffee, then enjoying it, and it is also the time when I spend writing my weekly coffee post in CCC community. This week it was finally time to open the Signature Blend of Dabov specialty coffee.
Their blends are either red labeled, or brown labeled (red=more fruity flavor, brown=traditional and more chocolate notes) but this is maybe their first black labeled exclusive blend. I was excited when I saw it, because usually black labeled coffees tend to be more expensive, but this has still a very reasonable price - about $10 for 200 grams of coffee beans.
After my issues with V60 filters recently, I decided to brew it differently this time, and also Grindr he beans even coarser. I was a bit surprised, because this time there weren’t a lot of fines in the ground coffee.
Next step… let’s try a different pouring schedule. Instead of the 50 ml of water for blooming phase, I went with double dose - 100 ml and after 35 seconds started pouring the other part of the water. Also, I did not divide the remaining water into two pours. Rather than, I poured slowly with a continuous pour. After reaching 340ml (for 21 g of ground coffee) I stopped pouring.
Surprisingly, my brew was completed in about 2:40 minutes! This was about half the time compared to the last week’s time of more than 5 minutes. Maybe I can go a bit coarser in my grind settings next time? I think these rough particles don’t get extracted that well in such a short time. Maybe a step or two coarser setting will push the brewing time more towards the 3 minutes of brewing time, which will result in more proper extraction.
And now… it’s time to enjoy this coffee in the Christmas atmosphere of our home!
For now the children are playing around and I better use that opportunity to enjoy my coffee peacefully. Some relaxing music will help to boost the mood additionally. It is like sort of a tradition already, to enjoy our Saturday morning coffee with cozy jazz at background.
To be honest, I don’t like that much this exclusive coffee brewed on V60. Although it was a bit under extracted, it had a bit of a bitterness in its taste profile. That was the case when I bought this exact coffee from the Dabov coffee shops, when I was in Sofia. I found it brilliant when prepared on the espresso machine, yet not that sweet and tasty when enjoying it filter brewed.
Espresso does add an additional sweetness and boosts the fruity taste of these beans. The shot becomes very thick and full bodied. It’s really close to the perfect espresso shot, and definitely makes me feel excited!
This blend combines some coffees that are sold separately in the Dabov shops, but the team did an excellent job in combining different coffees and receiving this great result. I think they also use a different roasting profile, to make the taste even more unique. This coffee is a real deal for the price it’s selling and I’m already trying to convince my coffee friend, with who I combine our deliveries, to buy a kilogram bag of this exact coffee. I think that he will eventually agree on my proposal… 😁
