
Today was one of those days where I could not think of what I'd like to eat. I've said in the past that I could live on spaghetti but I think I'm all spaghetti'd out.
Last night @poeticsnake suggested a challenge for Cookwithus and she said a dish can be made in many ways - and that inspired me when I looked in my fridge and checked out what I have. I found the last of an onion, some cherry tomatoes, and some carrots. I was craving a huge plate of vegetables.
So to get to the point I made a packet of Uncle Ben's rice and shredded the onion, carrot and tomato. Next, I added some pitted olives and some corn out of a tin - and voila - I had a meal. Thought I'd have some leftovers but no - I polished the lot.
Forgot to add that I'm not a fan of tuna and I know its good for me so I added some tuna - and with the other ingredients - it was delicious.

First I popped the carrot, onion and tomato in one of those wonderful kitchen inventions - pull the string and you have chopped veg

Add the corn and the pitted olives and surround with rice and then add the tuna.

The plate is upside down - and I did turn it around - but hey, it has a story to tell. Made by my 28-year-old daughter when she was 3 years old - and the other day she told a friend she had just made it - and the friend politely said how nice it was
So, this was my meal - made with what I had in the house - and I loved it.
