Good day everyone, I am glad to be in this great platform and i am glad to be in this topic participation. I will be telling us about my white rice, tomato stew and goat meat, This is like a common African dish, we all Nigerians eat rice and Stew almost everyday of our life. I ate it yesterday and i will prepare another so we all see it and learn it as we prepare in our various homes. The goof thing about this my African dish is it is prepared with goat meat, it is really rare for a Nigerian family to add goat meat to their cooking recipe, most times it is always chicken or turkey but I'll change that today.
INGREDIENTS ( Red Stew)
Braised ram meat chunks
Plum tomatoes
2 large Bell peppers
2 large Onions
4 Scotch bonnet peppers
3 cloves Garlic
Ginger: small thumb size
Half cup of Flavorless oil
One and three-quarter cups of Lamb stock
•1 teaspoon of Curry powder
•2 teaspoon of Dried thyme
•1 teaspoon of Bouillon powder or one cube (use any type you like, doesn’t matter)
•Salt (to taste)
BLEND THE TOMATO MIXTURE
Blend the tomatoes, a single large onion, bell peppers, scotch bonnet peppers, garlic and ginger, and set aside. Blending is essential that is why it is good to have at home.
BROIL AND BRAISE THE MEAT
Broil the braised lamb chunks in the oven until it is browned on both sides then set aside and make sure you cover.
PREP THE TOMATO PASTE
Use a large pot to cook the blended tomato on a medium heat until it forms to a paste. While it is boiling slice a big onion down and when it is reducing from it's heat boiling.
Once the tomato mixture has reduced, scoop the paste out of the pot and set it aside. In the same pot, heat the oil on medium heat and caramelize the onions until it is mostly softened. Add the tomato paste to the caramelized onions and add the cook on low medium heat for 5 minutes.
ADD MEAT STOCK AND SPICES
After 5 minutes, pour in the stock, and season with bouillon, dried thyme and curry powder. Stir and continue to cook for another 10 minutes on low heat, hope y'all following.
ADD MEAT OF CHOICE
After 10 minutes, add in the cooked ram, stir, and cook the stew covered for another 5 minutes on low heat. Taste for salt because most times people forget to do that because of their level of speciality and adjust to your preference, and cook for another 5 minutes covered.
After 5 minutes, your stew is ready to serve! Nigerian tomato stew is usually paired with boiled rice, beans, plantain, starchy root vegetables like yam and sometimes soups commonly eaten with fufu. I personally have tried fufu and Stew to be sincere it was so sweet though depending on the stew taste.
There you have your Red tomato stew with goat meat, I did not add the rice procedure because that is easy just wash the rice and put it on fire and it boils for some minutes and it is ready. I did not really do this my self my sister did she is a chef of all kind of African dishes.
