Hello and happy Sunday once again!
Sundays are special to me because they bring a calm space to rest, and try new things. This Sunday was no different. I finally decided to try making homemade fish pie, a recipe I have had in mind for a long time.
I have always loved how tasty fish pies can be. So, I challenged myself to make one from scratch and I must say, it was worth every minute, it's not a difficult task as I thought it would be.
If you haven’t tried homemade fish pie before, let me tell you, it’s not as hard as it may seem. As long as you have the essential ingredients (and a bit of patience), you can make it come out beautifully. I didn’t even have some basic tools like a pie cutter, rolling pin, or chopping board. But guess what? I improvised and the result was honestly great for a first attempt.
Ingredients I Used
For the Dough:
3 cups of flour
Baking powder
A pinch of salt
Margarine
Cold water
For the Filling:
Fish
Carrot
Onion
Curry, thyme, seasoning cube (Maggi), and salt
Vegetable oil
Water
Step-by-Step Preparation
- Making the Fish Filling
First, I boiled the fish with salt, Maggi, chopped onions, curry, and thyme. Once it was done, I removed the bones and mashed the fish.
I had initially planned to use Irish potatoes in the filling, but since they weren’t available, I made do with carrots. I chopped them into tiny pieces and set them aside.
Next, I heated some vegetable oil in a pan, added onions, and let them fry slightly. Then, I added curry, thyme, Maggi, and the mashed fish. I poured in a little of the fish stock and added the carrots. I stirred the mixture well and let it cook until it thickened nicely.
- Preparing the Dough
In a bowl, I combined flour, baking powder, salt, and margarine.
I rubbed the mixture together for about 5 minutes with my palm, then added cold water to form a soft, non-sticky dough. I covered the dough and allowed it to rest for 20 minutes.
The look after 20 minutes
After resting, I cut out small portions, rolled them out on a flat surface, added some filling to the center, folded them over, and sealed the edges with a fork.
- Frying the Fish Pies
I preheated my oil for about 3 minutes and gently placed the pies in the pan. I fried them until they were golden and firm.
The taste, honestly wasn’t far from the ones I buy for ₦700 each. The main difference was that mine were fried, not baked and my fork designs weren’t as neat as using pie cutter but those are things I will work on next time before I get the missing out tools for a perfect fish pie.
Trying something new in the kitchen is always exciting, especially when it turns out great. I’m glad I didn’t let the lack of tools stop me. This fish pie adventure has given me a memory to hold onto.
Thank you for reading and have a great Sunday.
