Here is one of my favorite ways to prepare summer chanterelles.
All the humid summer rains have caused these chanterelles to sprout up everywhere in the hardwood forests.
I can go to almost any forest around here and find them. Free food for me :-)
Here is a weird pizza dough mix I decided to try out. This one is technically keto as it is made out of almonds rather than flour.
It is somewhat difficult to prepare as you have to add apple cider vinegar, oil and water to get it to the right consistency to shape on the pan. Then you have to pre-cook it for around 5 minutes before putting toppings on it.
Now that it is precooked I can add all the toppings. For this pizza I used mozzarella, garlic pasta sauce, olives a bit of colby cheese (in the crust) and pepperonis.
Chanterelles can tend to dry out if they are layered in on top so I put them down with the pasta sauce so they can stay soft and tender.
Then they get buried under the cheese and pepperonis.
I threw a few bigger chanterelles on top to use them up. A few crispy ones on top add a bit of crunch to the pizza.
And now it is done. The fatter chanterelles on top didn't get too crispy and the almond flour dough ended up tasting great. The only thing not keto in this is the sauce... It wouldn't be pizza without the sauce so I had to make a compromise.
