As is my custom, I try to bring you a new, easy-to-make, and of course, delicious recipe every week 😋
So today I cooked a dish that we really enjoy at home, and what we enjoy is shared so others can enjoy it too 😉
I love béchamel, but I don't normally eat it because of its high dairy content, thank goodness, in the kitchen. There are many ways to make similar dishes even if they don't use the same ingredients.
So I've prepared a delicious version, very similar to béchamel sauce but with ingredients like almond milk and zucchini. Honestly, this cream impressed me with its mild flavor and delicate texture.
One ingredient that I think is essential in this recipe is nutmeg. Yes, this ingredient gives it that flavor that béchamel typically has, so if you decide to make it, you already know that nutmeg is key.
The amount of ingredients I used is enough for two or three people.
Now, without further ado, I invite you to make this exquisite recipe together.
Ingredients:
- 2 Tablespoons of Butter.
- 2 Tablespoons of Olive Oil, or whatever oil you have on hand.
- 1/2 Large Onion or one small one.
- 2 Garlic Cloves.
- 1 large zucchini or two small ones.
- 200 ml of Almond Milk (you can use regular milk).
- 1 teaspoon of grated nutmeg.
- Salt and pepper to taste.
- 50 grams of aged cheese.
- 280 grams of short pasta (use whatever you like best).
- 2.5 liters of water.
Let's get to the preparation:
Always remember to wash your hands thoroughly and the vegetables you'll be using.
Now we start by chopping the onion. We'll cut it into julienne strips and also mince the garlic.
Place a pot over medium heat and add the two tablespoons of butter, along with two tablespoons of olive oil. You can use any oil you have on hand.
Next, sauté the onion until translucent. Then, add the finely chopped garlic. Mix the ingredients thoroughly with a spatula or spoon and let it sauté over low heat.
Now we quickly chop the zucchini. I sliced it and then cut the slices into quarters.
We cast the Zucchini is a great addition to our Onion and Garlic recipe.
Add the Vegetable Drink. I've used Almond Drink and it's delicious. Coconut drink or milk is also a great match. Mix everything together.
Now we add the key ingredient, the one that will give the béchamel that touch of flavor: 1 teaspoon of nutmeg. If you want a stronger flavor, add a little more.
Add pepper and salt to taste, mix everything well with our kitchen spoon, and let it cook until the zucchini is tender. At that point, remove from heat and let it rest for a few minutes.
When we see that the steam from our preparation has decreased, we transfer it to the blender and blend until we have a smooth, lump-free cream.
Now we take our Zucchini Cream back to the pot and we set aside while we prepare the pasta that we will use to accompany this delicious Bechamel-style sauce 😜
Let's go Bring 2.5 liters of water to a boil. When it starts to boil, add the salt. Remember to add enough salt. I used sea salt, but of course, use whatever you have on hand.
Then we add the Paste and stir. To prevent the pasta from sticking together, this should be done occasionally while the pasta is cooking.
After about 6 or 7 minutes Let's test the pasta to see if it's ready. At home, we like it al dente, not too soft.
Since the pasta is ready, let's strain it.
And if you like, you can add a little butter.
We are ready to serve our dish with Bechamel Sauce! 😋
AND To make it a richer and more complete dish, we add aged cheese. The one I used is a mix of Parmesan, Pecorino, and Manchego. You can use this mix, or simply any of these or any other that you fancy or have on hand. I can tell you that any of these three types of cheese go very well with this recipe.

Como es mi costumbre trato de traerles cada semana una receta nueva, fácil de hacer y por supuesto deliciosa 😋
Así que hoy cociné un plato que disfrutamos mucho en casa y lo que se disfruta se comparte para que otros también lo puedan disfrutar 😉
Amo la crema Bechamel, pero normalmente no la consumo por su alto contenido en lácteos, gracias a Dios, en la cocina hay muchas maneras de hacer platos parecidos aunque no lleven los mismos ingredientes.
Así que he preparado una versión muy rica, muy parecida a la salsa Bechamel pero con ingredientes como, la Leche de Almendras y el Calabacín, sinceramente esta crema me dejó impresionada, su sabor suave y su textura delicada.
Un ingrediente que me parece fundamental en esta receta es la nuez moscada, si, este ingrediente le da ese sabor que normalmente tiene la Bechamel, así que si te decides a prepararla ya sabes que la Nuez Moscada es clave.
La cantidad de ingredientes que he usado alcanza para dos o tres comensales.
Ahora sin más preámbulos te invito a que juntos hagamos esta exquisita receta.
Ingredientes:
- 2 Cucharadas de Mantequilla.
- 2 Cucharadas de Aceite de Oliva, o el Aceite que tengas a mano.
- 1/2 Cebolla Grande o una pequeña.
- 2 Ajos.
- 1 Calabacín grande o dos pequeños.
- 200 Ml de Bebida Vegetal de Almendras, puedes usar Leche Común.
- 1 Cucharadita de Nuez Moscada rallada.
- Sal y Pimienta al gusto.
- 50 Gramos de Queso madurado.
- 280 Gramos de Pasta corta, usa la que más te guste.
- 2 litros y medio de Agua.
Vamos con la preparación:
Recuerda siempre lavarte muy bien las manos y lavar los vegetales que se van a usar.
Ahora empezamos picando la Cebolla, la vamos a picar en Juliana y picamos también el ajo.
Llevamos una olla a fuego medio, agregamos las dos cucharadas de mantequilla, junto con dos cucharadas de Aceite de Oliva, puedes usar el Aceite que tengas a mano.
Luego vamos a poner a sofreír la Cebolla, dejamos sofreír hasta que transparenten y luego agregamos el Ajo, este lo hemos picado finamente, con una paleta o cuchara integramos muy bien los ingredientes, dejamos sofreír a fuego bajo.
Ahora rápidamente picamos el Calabacín, yo lo he picado en rodajas y luego las rodajas las he picado en cuatro partes.
Echamos el Calabacín en nuestra preparación de Cebolla y Ajo, lo integramos muy bien.
Agregamos la Bebida Vegetal, yo he usado de Almendras y queda muy rico, la bebida o leche de Coco también le queda muy bien, mezclamos todo.
Ahora agregamos el ingrediente clave, el que le dará ese toque de sabor a Bechamel, 1 Cucharadita de Nuez Moscada, si quieres un sabor más fuerte añade un poco más.
Añadimos también Pimenta y Sal al gusto, integramos todo muy bien con nuestra Cuchara de Cocina y dejamos cocinar hasta que el Calabacín esté tierno, en ese momento se baja del fuego y se deja reposar unos minutos.
Cuando vemos que el vapor de nuestra preparación ha disminuido, lo llevamos a la licuadora y procedemos a licuar hasta que nos quede una crema suave y sin grumos.
Ahora llevamos nuestra Crema de Calabacín nuevamente a la olla y reservamos mientras preparamos la pasta con que acompañaremos esta deliciosa Salsa estilo Bechamel 😜
Vamos a poner a hervir 2 litros y medio de Agua, cuando esta empiece a hervir agregamos la Sal, recuerda agregar suficiente Sal, yo he usado Sal marina, pero claro usa la que tengas a tu alcance.
Luego incorporamos la Pasta y removemos para que la pasta no se pegue, esto hay que hacerlo de vez en cuando mientras la pasta se está cocinando.
Pasado más o menos 6 o 7 minutos vamos a probar la Pasta a ver si esta lista, en casa nos gusta al dente, que no quede muy blandita.
Como la Pasta ya esta lista, la colamos.
Y si gustas le puedes agregar un poco de Mantequilla.
¡Nos disponemos a servir nuestro plato con Salsa Bechamel! 😋
Y para que sea un plato más rico y completo le añadimos queso madurado, el que he usado es una mezcla de Parmesano, Pecorino, Manchego, puedes usar esta mezcla, o simplemente alguno de estos u otro que te apetezca o tengas a tu alcance, te puedo decir que cualquiera de estos tres tipos de Queso van muy bien con esta receta.
