Dear food lovers, it is a pleasure to share with you again. As you know, I am constantly learning and searching for new healthy recipes that fit my diet.
Sometimes it can be a little overwhelming to have to think about and find something to eat every day, especially for lunch. There are many recipes out there, but the key is to have the ingredients on hand. To be honest, I had seen this recipe with cauliflower a while ago, but as I mentioned before, this type of vegetable is sometimes difficult to find, so when I see it in good condition and I have the money, I have to take advantage and buy it.
When I had it, I immediately went to YouTube to find the recipe for how to prepare this cauliflower rice with vegetables. It was my first time making it, and I really loved it. Now I'll tell you how I prepared it and what ingredients I used, so you can try it at home too.
Ingredients:
- One small onion
- One green bell pepper (or in my case, half a bell pepper) 😄
- One tomato
- One medium cauliflower
- Garlic
- Olive oil
Amigos amantes de la cocina, un gusto compartir con ustedes nuevamente, bien saben, que ando aprendiendo y buscando cada dÃa, hacer nuevas recetas saludables, qué cumplan con mi dieta.
A veces resulta un poco abrumador, el tener que pensar y buscar que comer todos los dÃas, sobre todo en el almuerzo, existen muchas recetas, la cuestión es tener los ingredientes a la mano; la verdad desde hace un tiempo habÃa visto esta receta con la coliflor, pero como bien he mencionado antes, este tipo de vegetales a veces es difÃcil de conseguir, por lo que cuando lo veo en buen estado, si tengo el dinero, debo aprovechar y comprarlo.
Cuando lo tenÃa, enseguida me fui a buscar en YouTube la receta, de cómo preparar este arroz de coliflor con vegetales, primera vez que lo hago, y la verdad me encanto, ahora les echo el cuento, de cómo lo prepare y que ingredientes use, para que ustedes también se atrevan y lo hagan en casa.
Ingredientes:
- Una cebolla pequeña
- Un pimentón verde (o en mi caso, que tenÃa medio pimentón) 😄
- Un tomate
- Una Coliflor mediana
- Ajo
- Aceite de Oliva

Preparation:
Once we have all the ingredients, we can start preparing the dish. In the case of the cauliflower, the first step is to wash it thoroughly. To do this, we chop it up, removing each floret, place it in a bowl with water and vinegar, and leave it to soak for a few minutes.
Meanwhile, take the onion, bell pepper, and tomato, and chop them into small pieces, such as squares.
Preparación:
Bien, una vez que tenemos los ingredientes, procedemos con la preparación, en el caso de la coliflor, el primer paso es lavarla bien, para ello lo picamos, sacando cada ramito, lo colocamos en un bol con agua y vinagre, lo dejamos reposar allà unos minutos.
Mientras, agarramos nuestra cebolla, pimentón y tomate, lo picamos en trozos pequeños, como cuadrados.
Once this is done, we move on to the cauliflower. After removing it from the water, we chop each floret as finely as possible.
Now take the frying pan, add a dash of olive oil and garlic, then add the chopped vegetables, the onion and paprika first, then the tomato. Let it fry for a few minutes, then add the cauliflower.
Una vez hecho esto, vamos con la coliflor, luego de sacarla del agua, cada ramito, lo rayamos, quedando asi, lo más mÃnimo posible.
Ya con esto, tomamos la sartén, con un chorrito de aceite de oliva, y ajo, echamos nuestros vegetales picados, la cebolla y pimentón primero, luego el tomate, lo dejamos sofreÃr por unos minutos, seguidamente agregamos la coliflor.
Let everything cook for about 5 to 10 minutes, stirring occasionally, and add a little salt and other seasonings to give it some flavor.
Aquà dejamos unos 5 o 10 minutos que se cocine todo, lo vamos revolviendo todo, y esperamos, a su vez, le colocamos un poco de sal, y otros condimentos, para darle un poco de sabor.
Finally, we turned off the heat and served it. My mom had prepared this delicious meat to accompany the rice. It turned out really tasty. As I said, it was the first time I had made it and tried it, and my mom had never made it either, but she loved it.
It's definitely a good lunch menu and a great substitute for brown rice. I recommend it 100%. If you've never made it before, here you go.
Fun fact: If you have a good blender or food processor, you can chop the cauliflower in there. I don't have one, so I grated it, but it still turned out great.It takes a little more work, but it's just as fast and effective.
Ya finalmente apagamos y servimos, mi mamá habÃa preparado esta rica carne, para acompañarlo con el arroz, la verdad quedo muy rico, como dije primera vez que lo hago y lo pruebo, mi mama también, nunca lo habÃa hecho, quedo encantada.
Sin duda es un buen menú, para el almuerzo, y un gran sustituto del arroz integral, se los recomiendo al 100%, si nunca lo han hecho, bueno aquà tienen.
Dato curioso: si tienen una buena licuadora o procesador, puede picar allà la coliflor, como yo no tengo, por eso lo ralle, igual queda muy bien. Es un poco más trabajado, pero igual de rápido y efectivo, eso sÃ.
