"Alright, making a pancake crispy! As I already mentioned, making the pancake thin helps a lot but what also matters is that the dough is a bit more thinner, so put more liquid than solid. Remember that. Eggs if you want your pancake with eggs, flour and liquid. Some like milk, some add creme, but what I like to do is add a little bit mineral water because of the bubbles! As for the flour, rice and corn flour of course. You could also add banana mush or tiny apple pieces, but if you have not yet decided what do you want on top of your pancake, do you want it to be salty or sweet, cheese, vegetables and meat or perhaps strawberries and ice cream, you can add just baking powder or baking soda, a little bit of salt and vegetable oil. Now all options, salty or sweet are still open!"
"Alright! You can let the dough sit for a while in a fridge, especially if you've used wheat flour and then start making the pancakes. Make sure the frying pan is hot, not too hot but obviously a little bit hotter than if you were making a thick pancake. Put butter on the pan and when it's nice and brown, pour dough on the pan. Just so that the pan bottom is covered, only a thin layer. Flip it over when the dough is no longer liquid, fry it from the other side too and it's ready!"
"As you make the first ones, you might notice that the dough is too thick or too runny. That's easy to fix, just add more flour or more liquid. I usually like to add some whiskey to my pancakes at this point, or actually the whisky adds itself as I sometimes fail to measure the whiskey correctcly to my glass. The edgess of the glasss just are so unprredicktable. The glass is always too tiny for my pouringring. "So there you are, mainking... making some crispy crispy criscakes and making everything crispy and not getting any panckas... pancakes yourself although you have eight pans all of them hot ate the same time and you put butter and and and pour dough and why is that gaa glasss again empty what's wrong with it and you flip the pancakes and take them away and put them on a plate and ten kids take the pancakeds and scream that there's no ice-cream and that freaking Cris, crispy Criss your husband is late at work again and why the fuck is the glaaaaaas again empty and you pour dough and clean the puke of the floor of one of the kids or was it the dog and you don't remember how you got here and you add whiskey adn adn add eggs and you don't remember having this many kids you add a little crystal to the crispy pancakes that sure are panpannypancakes not crepes and the kids scream that there's no chocolate or strawberry sauce anymore and you just grab the frist first tube or bottle and say that ketchup is fine on ice-cream and you notice that your glass is again empty and you think that this is, is this the life, this is the life someone wanted not me not me not me but you sure did make THE PANCAKE EDGES CRISPY!"
