First of all, I just want to say that deja vu is a specific type of Deja entendu. Deja entendu is basically when you have heard something before and it sounds familiar but you cannot quite place it. The difference between this and deja vu is that in Deja entendu, the person has not experienced the thing themselves (and thus do not recognize the familiarity) while in deja vu they have already experienced it and know what caused them to feel this way.
Deja vu is not necessarily induced by familiarity, however. In fact, it can also be caused by your brain recognizing that you have done something similar to the current activity in another situation before and expecting the present situation to turn out like that other one.
For example, suppose you are eating at a restaurant with your friend. You know that the food is usually good there, and you have often had similar meals. Your brain starts to recognize some of the stimuli and actions in this situation as being analogous to past experiences where they resulted in a positive outcome (the food was delicious). The result is that your brain expects this experience to be good too.
So the next question naturally is, why does this brain process happen? What causes it to feel that way?
The first thing that people usually assume is that there is a sort of mystical explanation for it, which may be something along the lines of "your brain has somehow messed up and expected you to experience an event before it actually happens". This theory does not explain why deja vu is more common in some people than others or why its effects are not universally experienced.
Another common theory is that deja vu occurs because the brain expects you to experience an event, but then realizes what it expected was wrong. The result of this is that your brain 'resets' itself and feels as if the current situation has happened before.
