Remember I said something about improving my culinary skills in my quarantine challenge article.
Now, here is a follow-up of that.
I actually learnt how to prepare one of our local delicacies called Asa Iwa.
We usually use cassava to prepare it and other varieties of ingredients.
Now, you get the cassava from your farm which you planted or if you don't have a farm, you can buy it in the market.
I was made to understand that one cannot prepare it with any cassava from any farm because some of the cassava are always bitter.
Apart from that, not all the cassavas are good for the preparation of Asa Iwa, so one has to be careful so that it won't spoil the actual taste of the food.
THE ASA IWA PREPARATION PROPER
- The cassava is peeled one after the other.
- It is then cut into small sizes so that one can hold it firm and comfortably and can grind it well.
- The cassava is being grinded using a grinder till it becomes jelly.
- The leaves are then cut in small sizes and length just the way the cooker wants it.
- It is then wrapped with leaves in small quantities as the cook decides.
Ingredients used are;
- Onions (optional)
- Maggi
- Fish
- Salt
- Pepper
- Palm Oil
- Perewinkle
You can as well add other sweet spices in order to spice it up to the taste you want, but the ones I mentioned above are commonly used by my people here.
It usually takes a lot of time to prepare it, because you don't wrap it in bigger sizes but rather in small sizes and before you finish it, it would have consumed time.
Apart from the Asa Iwa, cassava is also used to make garri which we eat today in almost all part of the world.
Cassava can also be used to make fufu and other popular delicacies here in Akwa Ibom State and other states as well.
This Asa Iwa is usually cooked during weekends so that one can take proper time and prepare it.
I would have shown you how the food looks like but because I was in haste to eat the food, I forgot to snap so that I can show you guys what it looks like.
I will show you when next I prepare it. My beautiful mom prepared today's own and believe me it was sumptuous.π
