Hello everyone, I trust you all are doing great. I want to share with you how i prepared my Ujuju soup. This soup is mostly consumed by the southern eastern of Nigeria. Botanical name is Myrianthus Arboreus .
The soup Ujuju leaf ( veronical comforter ) is rich in vitamins A. C which support immune function , skin health and bone health. It also contains antioxidants that help combat oxidative stress and inflammation.
This Ujuju soup is very unique and nutrition and is a soup you can only make with the leaves but I'm pairing it with agbono ( irvingia ).
These are the ingredients used;
🔹 4 bunches of Ujuju leaf ( Veronica comforter )
🔹One cup of agbono ( irvingia )
🔹One medium onion
🔹One spoon of black pepper
🔹One spoon of salt to taste
🔹one okpehe ( local maggi )
🔹One cup of red oil ( palm oil
🔹Water
Procedure;
I will start by putting my pot on the fire and adding enough water that will cover my Ujuju leaves when cooking, then allow the water to boil.
Now that the water has boiled, i will add my already washed Ujuju leaves inside the boiling water and use my wooden stick to put them inside the boiling water very well and cover to cook for 5 minutes.
Please, ensure that the Ujuju leaves are fresh and soft for the best flavour and nutritional benefits.
While waiting for the Ujuju leaves ( yellow mulberry ) to cook, i quickly grab my mortar and pestle to crush and grind my agbono and okepehe then add half cup of red oil to it.
5 minutes after.
I bring my Ujuju leaves down from the fire, mix my agbono, black pepper and red oil together. Then i need to use my cooking spoon to take the Ujuju leaves from the pot to my mortar.
Then i will gently pound the Ujuju leaves with my mortar.
Put another pot on the fire 🔥 with 5 cups of water, my chopped onion then add the remaining haif cup of red oil into it.
Then add my pounded Ujuju leaves and stir.
Add salt and stir gently.
Don't cover your pot else the soup will lose its viscosity.
And my Ujuju soup is ready!!!
