We start by preheating the oven to 180°c,
We make the almond milk, we take the water to the blender cup and add the almonds, shake well, then we mix the almond milk with the apple cider vinegar and let it sit for 5 minutes. This will make the milk slightly cut and act as vegan buttermilk.
Comenzamos precalentamos el horno a 180°c,
Hacemos la leche de almendras, llevamos el agua al vaso de la licuadora y agregamos las almendras, agitamos bien, luego mezclamos la leche de almendras con el vinagre de manzana y dejamos reposar durante 5 minutos. Esto hará que la leche se corte ligeramente y actúe como suero de leche vegano.
In a container, mash the ripe banana with the help of a fork, then add the powdered sugar and vegetable oil until these three ingredients are well combined.

Add the dry ingredients to the wet mixture in three parts, mixing well after each addition until everything is well combined.
Añadimos los ingredientes secos a la mezcla húmeda, lo agregamos en tres partes, mezclando bien después de cada adición hasta que todo esté bien combinado.
Add the raisins, almonds and grated coconut, mixing gently until evenly distributed in the dough.
Agregamos las uvas pasas, las almendras y el coco rallado, mezclando suavemente hasta que se distribuyan uniformemente en la masa.
To finish, grate the carrot with the coarse part of the grater and add it to the mixture, stirring until all the ingredients are well integrated.
Para terminar, rallamos la zanahoria con la parte gruesa del rallador y la incorporamos a la mezcla, removiendo hasta que todos los ingredientes estén bien integrados.
Pour the mixture into the greased and floured pan and transfer to the oven for 45 minutes, or until a toothpick inserted in the center comes out clean.
