Today I want to share with you a delicious and comforting red bean soup with vegetables, a recipe I learned from my mother and treasure in my heart. This dish is not only perfect for cold days, but it is also packed with flavor and nutrients.
Hoy quiero compartir con ustedes una deliciosa y reconfortante sopa de caraotas rojas con vegetales, una receta que aprendí de mi madre y que atesoro en mi corazón. Este plato no solo es perfecto para los días fríos, sino que también está repleto de sabor y nutrientes.
Red beans are rich in protein and fiber, they combine perfectly with a variety of fresh vegetables that not only add color, but also a delicious texture to this soup. Every time I prepare it, I am transported back to my childhood, remembering those special moments in the kitchen with my beloved mother.
Las caraotas rojas son ricas en proteínas y fibra, se combinan perfectamente con una variedad de vegetales frescos que no solo aportan color, sino también una textura deliciosa a esta sopa. Cada vez que la preparo, me transporto a mi infancia, recordando esos momentos especiales en la cocina junto a mi madre querida.

- 500 grams of red beans.
- 3 potatoes.
- 1 onion.
- 5 sweet bell pepper.
- 6 cloves of garlic.
- 10 cups of water.
- 1/2 paprika.
- 1 bay leaf.
- chives to taste.
- 2 tablespoons of oil.
- Celery Spain to taste.
- Salt to taste.
- Garlic to taste.
- Black pepper to taste.
- Cumin to taste.
- Cilantro to taste.

Comenzamos escogiendo muy bien las caraotas, quitamos todas las impurezas y lavamos en abundante agua, luego agregamos a la olla con el agua filtrada, dejamos que se ablanden.

Después que notemos y revisemos que están blanditas las caraotas, lavamos los vegetales, y quitamos muy bien toda la tierra que traen.

Ahora, lavamos y picamos las papas
En cuadros pequeños para facilitar su cocción. Y de una vez agregamos a la sopa de caraotas.

Next, we chop the vegetables, take half of them to cut them into small squares and the other half into not so small pieces and transfer them to the blender.
Seguidamente, picamos los vegetales, tomamos la mitad para cortarlos en cuadros pequeños y la otra mitad en trozos no tan pequeños y los trasladamos a la licuadora.

Transfer the vegetables to the blender, blend on high until a homogeneous mixture is formed.
Trasladamos los vegetales a la licuadora, batimos a nivel alto hasta que se forme una mezcla homogénea.
We also chop the chives, the garlic and the celery Spain.
Picamos, también, el cebollín, el ajo porro y el apio España.
Now the vegetables chopped in squares are sautéed in the frying pan.
Ahora los vegetales picados en cuadros los sofreímos en la sartén.
Next, add the bay leaf and seasonings, stir until the vegetables are tender.
Seguidamente, adicionamos la hoja de laurel y los condimentos, removemos hasta que estén tiernos los vegetales.
Transfer the vegetables, both the liquefied and the sofritos, to the red bean soup pot. Stir.
Trasladamos los vegetales tanto los licuados como los sofritos a la olla de la sopa de caraotas rojas. Removemos.
After a few minutes add salt and cilantro to taste, cover and let it cook.
Pasado unos minutos agregamos sal y el cilantro al gusto tapamos y dejamos cocinar.
Once the time has elapsed, check if the potatoes are soft and if the flavor is good, rectify, and serve, enjoy.
Una vez transcurrido el tiempo, verificamos si está bien de sabor y si las papas están blandas, rectificamos, y servimos, a disfrutar.
