Greetings dear friends who love vegan food in @plantpowervegan, I wish you the best in this Monday beginning of the week.

This time I share with you the preparation of a simple but very delicious and nutritious recipe such as white bean soup and I added pumpkin and potatoes to give it a thicker consistency so that it does not look like a broth.

White beans are a variety of grains that provide many benefits to the body such as improvements in the digestive system, fiber, carbohydrates and proteins. It is also an inexpensive and easily accessible product in the market, which makes it a very basic food in the Venezuelan diet.

When I was newly married, we lived in a residence and the owner was an Italian lady who prepared a ministra with white beans and vegetables that was spectacular. From there my wife learned to prepare them and I also try to make them with her.

The addition of vegetables such as potatoes and pumpkin add fiber and nutrients to these grains and the soup is finally very smooth and thick and can be eaten alone. I accompanied it with white rice and with this I had lunch for the day.

Ingredients

• 400 grams of white beans
• 300 grams of pumpkin
• 1 large potato
• 1 branch of garlic, chives, cilantro and celery
• 2 sweet chili peppers
• 1/4 white onion
• Cumin to taste
• 5 cloves of garlic
• 1 tablespoon of vegetable oil

Preparation

• Previously the night before the beans are soaked in water and the next day they are washed three times before cooking. This in order to hydrate them and to release a little of the gases they contain.

• Place the beans in the pressure cooker, level with water and cook it for 45 minutes.

• In the second cooking time add the pumpkin and the diced potato and season with salt and cumin. Cover the pot and proceed to cook for 45 minutes more.

• When softening the beans proceed to make a sofrito with a spoonful of oil, place the garlic, the onion and all the other chopped seasonings for 10 minutes. Then remove with a soup ladle from the pot and place it in the sofrito.

Whisk well and then pour the sofrito into the pot. Let it cook for 20 minutes more so that the caraota takes the flavor of the sofrito.

• When ready, add some cilantro and serve hot.

Sopa de caraotas blancas con papas y auyama

Saludos estimados amigos amantes de la comida vegana en @plantpowervegan, les deseo lo mejor en este lunes comienzo de la semana.

En esta oportunidad les comparto la preparación de una sencilla pero muy deliciosa y nutritiva receta como lo es la sopa de caraotas blancas y le coloqué auyama y papas para darle una consistencia más espesa de tal modo que no quede como un caldo.

Las caraotas blancas son una variedad de granos que aportan muchos beneficios al organismo tales como mejoras en el sistema digestivo, aporte de fibra, carbohidratos y proteínas. además es un producto económico y de fácil acceso en el mercado, lo cual lo hace un alimento muy básico en la dieta del venezolano.

Cuando estaba recién casado, vivíamos en una residencia y la dueña era una señora italiana que preparaba una ministra con caraotas blancas y vegetales que le quedaba espectacular. De allí mi esposa aprendió a prepararlas y yo con ella también hago el intento.

Al agregarle vegetales como la papa y la auyama le aportan fibra y nutriente a estos granos y la sopa queda finalmente muy suave y espesa que se puede comer sola. Yo la acompañé con arroz blanco y ya con esto quedó solucionado el almuerzo del día.

Ingredientes

• 400 gramos de caraotas blancas
• 300 gramos de auyama
• 1 papa grande
• Una rama de ajo porro, cilantro cebollín y celery
• 2 ají dulce
• 1/4 de cebolla blanca
• comino al gusto
• 5 dientes de ajo
• 1 cucharada de aceite vegetal

Preparación

• Previamente la noche anterior se dejan remojando las caraotas en agua y al día siguiente se le hacen tres lavadas antes de llevarla a cocción. Esto con el fin de que se hidraten y que liberen un poco los gases que contienen.

• Colocar las caraotas en la olla de presión, nivelar con agua y ponerla a cocinar durante 45 minutos.

• En la segunda cocción agregar la auyama y la papa picada en cuadritos y sazonar con sal y comino. Tapar la olla y proceder a cocinar por 45 minutos mas.

• Al ablandar las caraotas se procede a hacer un sofrito con una cucharada de aceite, colocar los ajos, la cebolla y todos los demás aliños picados por 10 minutos. Luego sacar con un cucharón sopa de la olla y colocarla en el sofrito.

Batir bien y luego vaciar el sofrito en la olla. Dejar cocinar por 20 minutos mas para que la caraota tome el sabor del sofrito.

• Al estar lista, colocar un poco de cilantro en rama y servir caliente.
