Using the corn in a different way to make dinner. This is lightly fried food- just for 5 minutes.
now is harvesting time here in Norway most crops are ready. a few farm stands are offering pick-your-own vegetables. Here in Norway, the labor cost is high. So it is easy and profitable for them to offer self-picking. The customers can pick how much they want and pay reasonable prices for the freshest vegetables. We have one very popular stand just outside of town where they have such offers for summer to autumn vegetables as they become ready to harvest.
We were there last weekend and found their corn and beans were ready so we dropped in and picked some.
It was fun to pick quality fresh vegetables. we pick for our Sunday dinner. it is much better when they are so fresh.
We picked this much for our dinner. My husband wanted to cook them American-style, just boiling in water and served with salt, pepper, and butter.
But I wanted to make a new creation.100% vegan Maizidli
Ingredients:
1/2 cup soaked urad dal split black beans.
1 corn cob
2 cm fresh ginger
4-5 sprigs of coriander
1 green chili
1/2 tsp salt
1/2 tsp pepper
2 tbsp cornstarch.
for sautee
1 tsp oil
1 tsp mustard seeds
1 tsp cumin seeds
2 pinches of hing
1/2 tsp turmeric
chopped chives 2 tsp
4-5 cherry tomatoes.
1 tsp avocado oil.
In the mixer jar put soaked urad dal, chili, coriander, ginger, 1/2 tsp salt, and 1/2 tsp cumin seeds.
Grind to a coarse paste without adding water.
Grate corn off the cob using a grater.
Now we have spice-mixed urad dal mixture, grated corn, cornstarch, and the tender and clean husks of corn.
In a bowl take urad dal paste,
Add grated corn.
Cornstarch and mix it well in a thick batter.
Take one cleaned tender husk
Put 1 tbsp batter on the husk.
and fold the husk in the center
Make all husks into pockets, like this.
In a saucepan boil the water put a metal strainer/ or use a double boiler. arrange all folded pockets on the strainer or double boiler. and steam for around 5-6 minutes.
when the husk pockets change color and become softer they are done.
when cooled a little start peeling away the husk.
The steamed maizidli come out very easily.
In a frying pan pour 1 tbsp avocado oil to stir-fry the green beans.
After beans become tender remove them from the pan.
In the leftover oil add turmeric, cumin, mustard seeds, and hing.
After mustard seeds start popping/ add all the steamed Maizidli
Sautee them for about 2-3 minutes and add chopped chives.
Add chopped cherry tomatoes fry them for about one more minute and remove from the heat.
Dinner is ready. you can serve it with tomato ketchup. I use homemade date chutney.
