The Mooli ke Patte ka Saag is a traditional Punjabi dish, typically not found on restaurant menus.
This saag is a blend of fresh and tender radish leaves, cooked in a rustic style with basic spices and seasoning.
As the summers approach, the taste of radish saag becomes more pungent compared to the mildness of the fresh leaves. So, the peak time to try this saag recipe with radish leaves is during the winter season.
To make it, you'll need the following ingredients:
- 300 grams radish leaves
- Some garlic cloves
- Whole red chili
- Salt as per taste
Here's the step-by-step recipe:
- Clean and wash the radish leaves to remove any dirt. Finely chop the leaves.
Put the chopped leaves in a pressure cooker, add 1 1/2 cups of water.
Pressure cook until one whistle, approximately 5-6 minutes.
In a heavy-bottomed pan, heat mustard oil until smoke rises, then reduce the heat. Add garlic and whole red chili when the oil is hot.
Transfer the saag from the pressure cooker to the pan. Mash the saag once or twice using a masher. Cook until excess moisture evaporates, usually 8-10 minutes on low heat.
We prefer extra spiciness, so we added green chilies from the top. Green chilies have a unique taste, but it's up to you whether you want to add them or not. The dish will still taste delicious.
