To make this, you will need the following ingredients:
- 500g spring onions
- 4 small potatoes
- 4 green chilies
- 3 or 4 tomatoes
- Fenugreek seeds for tempering
- Oil
- Salt to taste
Here's the step-by-step cooking method:
- Start by washing and finely chopping the spring onions.
- Wash and peel the potatoes, then cut them into small pieces.
- Heat oil in a pan, add fenugreek seeds for tempering, and let them splutter. Then, add green chilies.
- Now, add the chopped spring onions and potatoes. Stir well and add salt according to taste. Cook until the onions are translucent.
- Once the onions are cooked, add chopped tomatoes and mix. Let it cook until the tomatoes are soft and the mixture blends.
- Gradually, add 1/2 teaspoon of garam masala and 1/2 teaspoon of red chili powder. Mix the spices well and cook the curry for 5-7 minutes.
- Optionally, you can add a mixture of coriander powder and turmeric powder for added flavor.
Finally, garnish with fresh coriander and serve. Your delicious Spring Onion Curry is ready to be enjoyed with rice or roti.
