Mostly in my family, Sunday is a special day also in almost every home in my region. I make sure I go extra mile to make special delicacies for my family which rice and chicken stew is always what my family have as lunch every Sinday as we come back from service.
Today, my hubby and I prefer to eat a different dish . It's been a rainy week especially this month of July and to cope with this I decided to make something hot to adapt to this cold weather so I chose unripe plantain my children can go ahead to enjoy their rice and chicken stew.😁
Green Plantains are rich in resistance starch which help regulate blood sugar level and improve insulin sensitivity. They also support digestive health and are good sources of potassium and a lot more.
Ingredients
Three fingers of green plantain
A handful of green beans
One bowl of onion
5 chili pepper
40 cL of palm oil
1 teaspoon of salt
Five cloves of garlic
One thumb size of ginger
A harmful of pumpkin leaves
Two medium size tomato
One teaspoon of Curry Masala
Instructions
Peel, dice and wash the green plantain and boil it on medium heat until tender for 9-10 minutes and set aside.
Prepare the ingredients as so; chop green beans, slice the onions chop the garlic and pound the ginger, slice the pepper and tomatoes.
Dry the pot and pour in the palm oil, saute onion and the garlic. Then put in ginger, tomato, pepper, curry masala, green beans . Saute them for about 2 minutes.
Now put in the plantain that have been kept one side with the water in it and stir then cover the pot to simmer for 3 minutes.
And lasty, put in the pumpkin leaves and dont leave it on the fire for long so as not to over cook .
Now the plantain vegetable porridge is ready to be served
