Warmest Greetings Vegans, today is a rainy day in my region and I've decided to make a very nice and spicy meal for this warm weather so I came up with this nice recipe idea: Vegetable Corn Stew.
This meal, just as the name implies has the combination of corn and some other vegetables, so with that, you know it's healthy. Well without much talking, let's move on to the
Ingredients:
- 2 cups fresh corn kernels
- 2 medium carrot
- 1 handful green peas
- 1 medium Irish potato
- 1 bell pepper
- 2 cups water
- ½ teaspoon of Salt
- ½ teaspoon of Cumin
- ½ teaspoon of Tumeric
- 5 Blades of Utazi (Bitter leaf)
- 2 cloves of garlic
- 1 tablespoon of Olive oil
- 1 bulb of Onion
Recipe
- I washed the corn and boiled it then I diced the Irish potato and boiled them in the same pot that I boiled the corn then I crushed the Irish potato using my mortar and pestle when it was soft enough and kept aside.
- I washed and diced the carrot, bell pepper. Chop the leaves, crushed the pepper and garlic together and sliced the onion and kept aside.
When the corn is fully done, drain the water.
In a pan heated to medium temperature, I poured in my olive oil, onion, garlic and pepper ,green peas, carrot, bell pepper, salt, tumeric, cumin, and lastly the utazi leaves. I sautéd while adding each of these ingredients.
- I added the Irish potato still sautéing. Then I finally added the corn and water. Then I stired it for 5 minutes before it was ready to serve.
This recipe combines the sweetness of corn with the earthiness of potatoes and the crunch of vegetables. It is not only tasty but spicy enough to my desire and also very healthy. It can be served with rice, or eaten as a soup (that is just like that).
