In the references on social media or online journals that I read, goat meat does not cause cholesterol or hypertension, but in reality many people in my community consume goat meat, their cholesterol and blood pressure will rise. Is it possible that this also affects our exercise patterns and our staple food of rice so that goat meat becomes bad? However, I don't understand and forgive me if this information is wrong in your assessment.
This afternoon I just consumed goat meat. Usually our community's habit is to provide other foods to ward off hypertension and cholesterol after we consume goat meat. And the accompanying food is cucumber which can be processed into a drink or just consumed as an original. However, this time I will make a pickled cucumber recipe as a side dish after consuming the goat meat. And you can see my recipe here
Materials needed
1. Cucumber (because I will only make one or 2 servings, I only need 1 to 2 medium sized cucumbers.)
2. Pineapples (in this recipe I use 2 pieces of pineapple so that the pickles I make taste fresher)
3. Shallots (use enough shallots according to taste and I used 2 cloves of shallots in this recipe)
4. Red chilies (I want the pickles I produce to have a mild taste ranging from sour and salty to spicy so I only need 2 large red chilies, if you like it spicy you can increase the amount again)
5. Salt (I made this recipe with pink Himalayan salt, but this is optional. You can use any salt according to your wishes, and I used ½ teaspoon of Himalayan salt, and during the making process, if I think the resulting taste is not right, then I'll add a little more)
How to make :
1. Wash the cucumber then peel the cucumber in alternating patterns to give it a pattern, or you can also peel all the cucumbers then cut into rounds or according to your taste.
2. After the cucumber I also cut the pineapple into small pieces, the taste of the pineapple this time is a little sour so I think this taste is very suitable for making pickles
3. The next step is to wash the large red chilies and cut them into small pieces without removing the seeds
4. After that, prepare the shallots by peeling the onions and washing them until clean, then cutting them thinly
5. After that, mix the red onion pieces, red chili pieces into a container with the pineapple pieces and cucumber.
6. Then the final step is to mix in enough salt, then stir well and check the taste to see whether the sour and salty flavors have merged into one so that it suits our taste.
7. After stirring, let it sit for 5 – 10 minutes until the water in the cucumber and pineapple comes out naturally to form a little sauce there so that the taste produced by this pickle is much fresher.
That was my simple pickle recipe, sometimes there are some recipes that add chopped carrots and lime or lemon juice, but it all depends on taste. In this recipe, because the taste of pineapple is a little sour, I will not add orange juice to it.
