We all know how healthy the cucumber is, which we usually have as a salad . But have you ever try to make cucumber curry…. Which is full of fiber and nutritious.
This time in our farm we gets plenty of yellow cucumber. Yesterday after having a heavy lunch i was confused what make for the dinner , because we want to have something light and healthy . Than I remember about cucumber curry which my mom cooked in my childhood sometimes.
I immediately deside to make this curry . Which is quick and easy to make & healthy and delicious for your tummy . This is a side dish which go very well with chapati or rice. You can enjoy it for lunch and dinner .
Just chopped the cucumber and make curry with some simple herbs and enjoy it with your loved ones . Here is the details of the recipe :

INGREDIENTS ✅
- Yellow Cucumber 4-5
- Green chilli 2
- tomato 1
- Mustard oil 1 tbsp
- cumin seeds 1 tsp
- Hing one pinch
- Salt to taste
- Turmeric powder 2 tsp
- red chilli powder 1 tbsp
- coriander powder 1 tbsp
- Garam masala 1/3 tsp
- dry mango powder (optional)
PROCESS ✅
Step 1 :
First taste all cucumber before the chopping , because sometimes it is bitter in taste and can spoil your whole currry . This time I used yellow cucumber , to chooped this you don’t need to peel the skin , just make 2 part and cut in the pieces . If the cucumber is ripe than make small pieces .
After chooping , wash it properly with the water and stains all water .
On the other side cut the green chilli and tomato. This time I don’t have tomato so i just skipped tomato and add dry mango powere at the last to give it a tangy flavour.
Step 2 :
Now heat oil in a kadai , to make this curry we need minimum oil , you can use any type of oil , this time i use mustard oil .
When the oil is hot , add cumin seeds , hing . And when cumin seeds start to crackle first add green chilies, saute for some second than add cucumber pieces .
Give it a quick mix and add salt and turmeric powder. Again mix well , add little water , cover it and cook for 2-3 minutes.
Step 3 :
After 2 min check it . If it is not cooked add some more water and again cook it. Cook it on the low to medium flame .
When it is 80% cooked , add red chilli powder, coriander powder and garam masala and again cook it for 1-2 min .
When it is cooked add dry mango powder. If you add tomato you can skip to add mango powder.
Now your curry is Ready to enjoy . Enjoy it with chapati or rice. And give a light and healthy taste to your tummy 😀😀.
