Hey vegan lovers, enjoying the day by living the 100% vegan day challenge is not difficult for me, even though I am not a vegetarian but I always accept vegan food very well, besides being cheap, vegan food is the only menu that can help me lose weight slowly. Diets are always boring, but implementing vegan recipes can be a lot of fun. Vegan Day 100%
I have 3 of my best menus for this entry, the first is the breakfast menu with Smoothie banana dates, which is one of the healthy energy breakfasts for me. Don't you think bananas are too delicious to be processed into smoothies? Well, I totally agree, because the taste of bananas is one of the best flavors in smoothies made from fruit, besides having a soft texture, bananas also have a distinctive aroma that is very soothing. Second, I have a delicious and unique lunch menu, namely Roasted Rice. Why did I choose grilled rice? I love grilled rice, but finding vegan grilled rice is not easy, out there I have never gotten a grilled rice that meets my expectations, rich in spices, without meat, and of course filled with various of my favorite vegetables. Now the third, I cooked a simple and certainly healthy dinner menu, namely Sweet Potato Filled Pancakes, actually pancakes always display a luxurious impression with durian or chocolate jam filling, but this time I want to give an interesting color to the pancake dish. I will take you to cook with me this time, here are the recipes and steps to make a 100% vegan daily menu.
1. Dates Banana Smoothies
Breakfast started with freshness, fruit that was fresh and sweet and rich in vitamins was the right choice to fill the stomach this morning, I made banana date smoothies as a light and beautiful opening menu for the day to start the activity. The recipe is free of sugar and other animal ingredients so it is very healthy to consume in your morning, so here I make a serving of smoothie, if you want to make more you can add any ingredients needed.
Ingredient
- 3 small bananas
- 3 dates
- 3 cm fresh ginger
- 400ml water
Preparatory Steps
Step 1 I started to prepare the ingredients by peeling the banana and then cutting it into several pieces,
Step 2 Next I also cut the dates, and remove the seeds of the dates first, then clean the ginger and cut it into several pieces, so that it is easy to grind.
Step 3 Next, put all the ingredients in a blender, then add the mineral water.
Step 4 Then blend until completely smooth until all the ingredients are completely dissolved.
Step 5 Next, pour the smoothie into a glass and sprinkle with sliced dates and bananas, and the smoothie is ready to be enjoyed.

2. Vegan Roasted Rice
After finishing breakfast with light dishes, every day as usual I always eat rice, maybe because it has become a staple food so that rice is a mandatory menu and cannot be avoided. However, cooking rice in general is no stranger to stir-fried vegetables or soup, I've done it many times, but cooking it by burning will feel different this time.
The Ingredient Used
- 2 servings of white rice
- 2 ear mushrooms
- 1 piece of tempeh
- 3 stalks of green spinach
- 3 stalks of red spinach
- 10 grams of bean sprouts
- 1 sprig of curry leaves
- Enough banana leaves
Puree Seasoning
- 1 clove of red onion
- 2 cloves of garlic
- 2 hazelnuts
- 10 pieces of cayenne pepper
- 2 red chilies
- 5 cm turmeric
- 2 lime leaves
- 4 cm galangal
Cooking Steps
First, I started by preparing some of the seasoning ingredients, by grinding all the ingredients as finely as possible.
Next I soak the ear mushrooms in water for about 10 minutes, then chop the mushrooms into small pieces.
Next start cutting the tempeh into cubes, then start frying until golden brown.
Now after everything is done, I continue to saute the ground spices, stir-fry until fragrant, and add a little water.
Then, after the water starts to shrink, add the mushroom pieces, then add the bean sprouts, then stir and cook until the vegetables are half wilted.
Then after the bean sprouts began to be half cooked, I put in the tempeh that had been fried earlier and then added salt.
Next add the curry leaves, and 2 servings of white rice, mix well and cook for another two minutes.
After 2 minutes add the spinach and stir again and cook for another 5 minutes.
Now after the rice starts to cook, I will start wrapping it in banana leaves, prepare 2 banana leaves, place the rice on top and the banana,
Then wrap the rice lengthwise, then conclude with a stick. When concluding the rice, don't forget to compact the rice by pressing a little bit slowly.
Once wrapped in both, prepare a roasting teflon, then bake for up to 15 minutes, or until the banana leaf wrap turns brown.

3. Sweet Potato Pancakes
Enjoying a simple dinner is the right choice this time, this menu is not too heavy in my opinion, but it is very rich in benefits with a combination of sweet potato as the best jam in pancakes. If I usually enjoy sweet potato stew directly, this time I feel bored with the choice. Therefore I have an idea, enjoying sweet potato stew in pancakes will be much more tempting. So, I created this recipe for pancakes filled with mashed sweet potatoes. If you are curious, let's start preparing it.
Ingredients
2 yellow sweet potatoes
1 purple sweet potato
Thick coconut milk to taste (optional)
1 pandan leaf
Cooking Procedure
Step 1 The first, I started to prepare the pancake filling, by peeling the sweet potato, then cutting it into small pieces, then I steamed it for about 15 minutes.
Step 2Once cooked, remove the sweet potato then drain for a while then crush the sweet potato until smooth, soft textured.
Step 3After the sweet potato is crushed, prepare the flour in a container, then add coconut milk or you can replace it with water according to taste. Then add salt, then stir evenly coconut milk until the mixture thickens.
Step 4After the dough thickens, add food coloring according to your taste, here I use green and pink.
Step 5Next, after the dough is ready, bake the pancake batter on Teflon to make the dough wide, then bake until cooked.
Step 6Once cooked, add the sweet potato filling that has been mashed earlier, then fold it according to your taste, do it until it's finishing.
Step 7Then when finished, heat the remaining thick coconut milk with pandan leaves, then pour it over the pancakes, now I don't use sugar at all, if you want you can add it.
