Today I came with a new recipe of Loya. It is a green vegetable and mostly found in Rajasthan. In summer time every ones house this loya vegetable is very common in village of rajasthan. Most people in farms grow this veggie and have it. It looks like small bottle gourd but have some black spots and taste is also similar to it.
Today one of my neighbour bought this for my family from their farm and I made a curry from this. So lets see how to make this plant based curry-
INGREDIENTS-
▪︎loya-2
▪︎Garlic pods-4
▪︎green chili-2
▪︎curry leaves-5
▪︎oil-
▪︎cumin seeds-½tspn
▪︎turmeric powder-½tspn
▪︎red chili powder-½tspn
▪︎coriander powder-½tbspn
▪︎salt-to taste
▪︎sugar-½tbspn
▪︎drymango powder-½tspn
METHOD
1.wash loya and peel it.
2.now cut the loya.
3.cut them in sqaure or any shape.
4.take all the below ingredients and crushed the garlic pods in mortar pestle.
5.heat oil in a pan.
6.cut chilies.
7.add cumin seeds.
8.now add green chili and curry leaves.
9.add crushed garlic.
10.further add loya.
11.mix it.
12.now add turmeric powder.
13.add red chili powder.
14.add coriander powder.
15.further add salt.
16.mix all the spices well.
17.now add little water.
18.stir it.
19.cover it and cook for 10 to 15 mins till they become soft and tender.
20.now add sugar and dry mango powder give a nice mix. Cook for 2 mins and off the flame.
21.its done and ready to serve now with hot chapatis.
