Its yet another weekend and hope you had a fruitful and healthy work week. And to relax and enjoy this weekend, I bring to share with you a special kind of snacks you can prepare from cassava βοΈ and coconut π₯₯. Its so unique, simple and delicious that you will not want to miss out on it.
Cassava is one plant π± tuber we neglect and not making use of its full potential in our homes. Although in my country Nigeria π³π¬, we enjoy cassava in different ways like the cassava salad π₯ with herbs πΏwhen itβs boiled and cut into pieces , cassava flakes that we make into granules for stirring like semolina and cassava pudding.
This very recipe I prepared to share with my vegan family is one best ways to enjoy cassava because its very easy, simple and at the same time delicious with coconut π΄π₯₯by its side. Its one recipe you will crave for especially during hot weather since its a wet snack and can be chilled in the refrigerator before consuming.
This traditional Nigeria π³π¬ snack contains natural carbohydrates and one you can reduce as adults once you boil the cassava, peel and slice them, then soak it over night for best result. Adding coconut π₯₯ by the side to consume this snacks makes it completely so delicious and more of a healthy meal.
Carbohydrates are the bodyβs most important and most available source of energy for children. Cassava is a starchy tuber π± root that is also very low in fat and protein but rich in B - Complex vitamins and folic acid . Cassava is also a good source of minerals such as zinc, magnesium, copper, iron and magnesium . The coconut π΄π₯₯ a healthy heart food as nut .
Here I show you the step by step to this simple cassava coconut snacks delight.
INGREDIENTS:
1 large fresh cassava tuber 1 medium whole coconut Lots of water π¦ Salt
STEPS FOR PREPARATION:
Step 1.
To prepare this cassava coconut, we start by cutting the large cassava in rounds.
As here above.
Step 2.
We then wash them thoroughly with lots of water π¦
Step 3.
We place the cassava in a pot and onto the cooker, covered for boiling
Boil for at least 15 minutes and the color will change from white to milk color as above.
Step 4.
Once it cooks, we pour into a basket π§Ί to drain out the water and leave to cool down.
And we gradually peel off the cassava back
Step 5.
And we start slicing the cassava in medium thick strips
And we slice all readily
Step 6.
Here we take it into a big bowl for soaking overnight. Approximately for 10 hours
And here the next morning, after about 10 hours.
We drain off the water
Step 7.
We turn it back into the bowl and add fresh clean water and salt.
After about 5 minutes, we drain off the water again, making it readily to consume
Step 8.
We crack the coconut, bring out the flesh and slice them readily.
Then wash thoroughly adding salt
Step 9.
Then we serve this snacks in style , first adding the cassava strips
And the coconut π₯₯ to it.
