Including salads in my daily diet is very important for my health, since some time ago I suffered from cancer and I have to take care of myself a lot, also because it provides me with many nutrients and helps me to satiate anxiety, so today I share this recipe for cassava, carrot and celery salad, a simple meal to prepare, very healthy and ideal to accompany a main dish. Cassava is a tuber rich in fiber, vitamins and potassium; it fills us with energy and helps digestion. However, carrots are a good source of vitamin A, ideal for the skin, and celery, because it contains a lot of water, helps us to lose weight and reduce appetite. I hope you like this simple recipe.
Incluir ensaladas en mi dieta diaria es muy importante para mi salud, ya que hace un tiempo sufrí de cáncer y tengo que cuidarme mucho, además porque me aporta muchos nutrientes y me ayuda a saciar la ansiedad, por eso hoy comparto esta receta de ensalada de yuca, zanahoria y apio, una comida sencilla de preparar, muy saludable e ideal para acompañar un plato principal. La yuca es un tubérculo rico en fibra, vitaminas y potasio; nos llena de energía y favorece la digestión. Sin embargo, la zanahoria es una buena fuente de vitamina A, ideal para la piel, y el celery por contener mucha agua, nos ayuda a perder peso y reducir el apetito. Espero que les guste esta sencilla receta.
500 grams of yucca, 01 carrot, 02 celery stalks, 1/2 red onion, 01 tablespoon of olive oil, 01 teaspoon of vinegar, 01 teaspoon of mustard, 01 teaspoon of sugar, salt to taste.

Comenzamos esta receta pelando y cortando la yuca en trozos, luego ponemos agua en una olla y la cocinamos hasta que esté blanda. La colamos, la dejamos enfriar y la cortamos en cubos y reservamos.
