Nuggets de soya para comensales escépticos
Hi, friends! Soy is one of my favorite ingredients because of its versatility, I've done a lot with it and there is still a lot to be done. I also like to use soy because I've met a lot of people that don't like it because of a bad experience they had before with the so-called "soy meat", they don't understand that it wasn't the soy but the way to cook it that made it taste bad, so they won't give it a chance now, despite it being one of the better plant sources of protein. These nuggets are very easy to do, they can be done with a wide selection of vegetables, here is today's version.

También me gusta usar la soya porque he conocido a mucha gente que no le gusta por una mala experiencia que tuvieron antes con la llamada "carne de soya", no entienden que no era la soya sino la forma de cocinarla lo que le daba mal sabor, así que ahora no le dan una oportunidad, a pesar de ser una de las mejores fuentes vegetales de proteína. Estos nuggets son muy fáciles de hacer, se pueden hacer con una amplia selección de verduras, aquí está la versión de hoy.

Así que... pido disculpas, mi teléfono tuvo un fallo y perdí las primeras fotos que tomé, con todos los ingredientes colocados juntos antes de cortar, pero no son ingredientes raros así que creo que con la que sobrevivió y los nombres estaremos bien.

PREPARATION | PREPARACIÓN
Since we are trying to make nuggets that a person not so into vegetables will eat, we are going to cut all the ingredients into cubes as small as we can. Cut them in the orden you are going to add them to the pot.
Como estamos tratando de hacer nuggets que una persona no tan aficionada a las verduras se coma, vamos a cortar todos los ingredientes en cubos tan pequeños como podamos. Córtalos en el orden en que los vas a añadir a la olla.
Start with some oil on the pan, then add the onion first... I think a lot of my recipes start this way, so I´ll explain why... The onion is not the hardest ingredient to cook, but its flavors really flourish when you caramelize it, which is better to do when there are no other ingredients that will lower the temperature of the oil, when you add it last, it gets more boiled or steamed than fried. So, start with the onion, then celery, leek, chili, bell pepper, and finally the cabbage and the sprouts.
Empieza con un poco de aceite en la sartén, y luego añade la cebolla primero... Creo que muchas de mis recetas empiezan así, así que explicaré por qué... La cebolla no es el ingrediente más difícil de cocinar, pero sus sabores realmente florecen cuando la caramelizas, lo que es mejor hacer cuando no hay otros ingredientes que bajen la temperatura del aceite, cuando la añades al final, queda más hervida o al vapor que frita. Once all the other ingredients are done we add the soy, then all the seasoning, mix really well, add about half a cup of water or a bit more if you want to incorpore more flour. Low the heat and start adding the flour, mixing in three parts, then turn off the heat, mix really well, kneading with the paddle. Let it cool and then form some balls, smash them flat until they are about 1 cm thick.
Fry them with enough oil until golden brown and reserve... yes, we are not done yet.
Una vez que todos los demás ingredientes están hechos añadimos la soya, luego todos los condimentos, mezclamos muy bien, añadimos aproximadamente media taza de agua o un poco más si queremos incorporar más harina. Bajamos el fuego y comenzamos a agregar la harina, mezclando en tres partes, luego apagamos el fuego, mezclamos muy bien, amasando con la paleta. After frying them they are good to go, but the texture inside is a little too soft, and nuggets, in general, absorb much oil, so we are going to bake them for about ten minutes until they lose more moisture and get harder.
Once ready, serve them like any other nugget, we had them for dinner with rice and salad. They taste a bit spicy but not too much. So yummy, and so high in protein, a great substitution for chicken nuggets.
Después de freírlos están bien, pero la textura interior es un poco muy blanda y los nuggets en general absorben mucho aceite, así que vamos a hornearlos durante unos diez minutos, hasta que pierdan más humedad y se pongan más duros.
Una vez listos, sírvelos como cualquier otro nugget, nosotros los cenamos con arroz y ensalada. Tienen un sabor un poco picante pero no demasiado. Están muy ricos, y ricos en proteina, una gran sustitución para los nuggets de pollo.
