Hello guys!
It always rains here in Singapore in the morning.
I am thinking of a dish to complement the weather. So I decided to cooked Lugaw ( chicken rice porridge). This is a dish using glutinous rice cooked in water and some spices until it breaks up into a thick consistency.
It's easy to cook.
You will just need:
1 cup glutinous rice
Garlic mince and toasted
Patis ( fish sauce) or you can use salt
Chicken ( any part you like)
Ginger
Dash of pepper
Hard boiled egg and chopped onion chives for garnishing
Kasugba (safron for yellow coloring)
Instructions:
1.Mince garlic, onion and ginger
2.Prepare the pan. Add oil and saute garlic, onion and ginger.
3.Add the chicken. Mix with the spices
4.Add water. Cover the pan and boil for 10 minutes.
5.Add the rice and mix well. Boil again for 10 to 15 minutes until the rice disintegrates and thicken.
6.Serve hot with egg and garnish with chopped onion chives and add some condiments like fried tofu!
Delicious breakfast for the rainy season.
