Bugün sizlerle son dönemlerde evde bir çözüm bulduğumuz İskender hakkında konuşmak istiyorum. Malum son birkaç yıldır dışarıdan yemek yemek çok da mantıklı bir hareket değil ve ister istemez insan lahmacun ve iskender gibi tatları özlüyor. Bende veya ailemde ise porsiyonuna 1000 Türk Lirası'na yakın bir parayı bir porsiyon İskender'e vereccek ne istek ne de durumumuz var.
Bu yüzden de evde bir çözüm bulma arayışına girdik. Aslında salçalı-domatesli sos hariç hepsi hazır olduğundan çok rahat oldu. Porsiyon başına 2'ye yakın tırnak pidesi kullandık ve 2 paket de (bol dönerli istediğimiz için) kuzu-dana döneri kullandık. Bunlar yanlış hatırlamıyorsam 400-500 gr paket başına ve göreceli şekilde uygunlar. Bim'de satılıyor.
İlk önce pideleri izlerinden takip ederek küçük küpler hâline getirdikten sonra kalan iş salçalı-domatesli sosu hazırlamaktı ki bence bu da oldukça kolaydı. Ben aşağıya malzemeleri yazacağım ne kadar basit olduğunu siz de göreceksiniz.
Malzemeler
1 tepeleme yemek kaşığı domates salçası (isterseniz yarı yarıya biber salçası da ekleyebilirsiniz ama ben yakışacağını düşünmüyorum)
1 yemek kaşığı tereyağı
2 domates rendesi
3 su bardağı kaynar su (1 bardağını et suyu olarak da ekleyebilirsiniz)
baharatlar (tuz, karabiber, pul biber, toz kırmızı biber)
Sosunun malzemeleri bu kadar. Hazırlaması da bir bu kadar rahat ama ortalığı kirlettiği de bir gerçek. Salçalı bir şeyler hazırlamanın laneti bu sanırım. Mutlaka etrafı kirletecek.
Tereyağını erittikten sonra üzerine salçayı ekleyip iyice kokusu çıkana kadar kavurdum. Bu süreçte aynı zamanda da kalan tırnak pidelerini kesmeye devam ediyordum. Özellikle de daha ilk dakikadan salçanın sıçradığını gördükten sonra başında beklemeyi bırakıp diğer işlerime odaklandım.
Salça iyice kavrulduktan sonra üzerine domates rendesini ekledim ve onları da bir süre kavurdum. Fokurdamaya başladı ki üzerine kaynar suyu ekledim. Ardından da baharatları. İçerisine, ne kadar sevsem de, acı eklemenizi tavsiye etmem çünkü İskender acılı olmaz. Bu sanırım benim için karşı çıkılmaz bir kuraldır.
Sos hazır olduğunda ise küp küp doğradığım pideleri biraz tereyağı ile kavurup ısıttıktan sonra tabağı hazırlamaya başladım soğumadan.
İlk olarak pideler, üzerine sos ve onun da üzerine döner ve İskender'imiz hazır. Oldukça kolay, Porsiyonları, sosu ve döneri istediğiniz gibi hazırlayabileceğiniz bir yemek. Mesela bana normal porsiyon her zaman fazla gelmiştir ve bu sefer kendime bir garsonun bana göz devirmeden siparişimi almayacığını bildiğim yarım porsiyonluk İskender'imle mutluydum. Oldukça da lezzetliydi ve sos tam nokta atışı olmuştu.
Yapacaksanız eğer kesinlikle bu şekilde deneyin derim çünkü sadece salçalı olduğunda o yoğun tadı vermiyor ne yazık ki.
Sanırım bugünlük bu kadar. Bir daha ne zaman yaparız bunu bilmiyorum ama şimdilik uzun bir süre yetecek kadar doydum. En azından dışarıdan en az 3000 TL harcamaktansa evde maksimum 750 TL'ye 8 porsiyonluk bir yemek çıktı.

I hope you are well or are trying to be well. I feel better after the two-day break I gave myself and I want to say that I am back with a bang. I hope I can continue at the same speed from where I left off.
Today I would like to talk to you about İskender, which we have recently found a solution at home. As you know, eating out for the last few years is not a very logical move and inevitably one misses flavours such as Lahmacun and İskender. In me or my family, we have neither the desire nor the situation to give a portion of İskender for a portion of money close to 1000 Turkish Lira(25 USD).
In fact, it was very easy since everything was ready except the sauce with tomato paste and tomato sauce. We used about 2 pita per portion and 2 packs of lamb- calf döner (because we wanted plenty of döner). If I remember correctly, these are 400-500 gr per pack and relatively affordable. They are sold in Bim.
Firstly, we cut the pita into small cubes by following the traces and then the remaining work was to prepare the tomato-paste sauce, which I think was quite easy. I will write the ingredients below and you will see how simple it is.
Ingredients
1 heaping tablespoon of tomato paste (you can add half and half chilli paste if you want, but I don't think it would be good)
1 tablespoon of butter
2 grated tomatoes
3 cups boiling water (you can also add 1 cup as broth)
spices (salt, black pepper, chilli flakes, red chilli powder)
These are the ingredients for the sauce. It is just as easy to prepare, but it is a fact that it makes a mess. I guess that's the curse of preparing something with tomato paste. It's bound to make a mess.
After melting the butter, I added the tomato paste and roasted it until it smelled good. At the same time, I was continuing to cut the remaining pita. Especially after I saw the tomato paste splattering in the first minute, I stopped waiting and focused on my other work.
After the tomato paste was roasted well, I added the grated tomatoes and roasted them for a while. It started to bubble, so I added boiling water and then the spices. No matter how much I like it, I don't recommend adding hot spices because İskender is not spicy. I think this is an unquestionable rule for me.
When the sauce was ready, I fried the diced pita with some butter and heated it, then I started to prepare the plate before it cooled down.
First the pita, then the sauce and then the döner and our İskender is ready. It's quite easy, you can prepare the portions, sauce and döner as you like. For example, a normal portion is always too much for me and this time I was happy with my half portion of İskender knowing that a waiter wouldn't take my order without rolling his eyes at me. It was quite tasty and the sauce was spot on.
If you are going to make it, I would definitely say try it this way because unfortunately it doesn't give that intense flavour when it is only with tomato paste.
I think that's it for today. I don't know when we will make it again, but for now, I'm full enough for a long time. At least, instead of spending at least 3000 TL (75 USD) from outside, we had a meal of 8 portions at home for a maximum of 750 TL (19 USD).
