Hello Hive! It’s Wednesday, so the weekend is already approaching fast! Pheeeew, time flies!
With @altheana, we usually celebrate the end of the week with a beer on Friday night. Well, she prefers Coca-Cola or a light beer. Whereas for me, it’s beer above all. But last weekend, we wanted to change our habits a little.
The inspiration behind this mocktail
At the moment, while working, I have YouTube in the background with DJs mixing live. Most of the time, they perform in bars with crazy views: by a paradise beach or on a superb rooftop. And every time, colorful cocktails parade before my eyes.
Naturally, after a month immersed in this atmosphere, I had two cravings:
- Drink a cocktail/mocktail
- Buy a mixing table
Well, I doubt that @altheana would approve of the second point. And anyway, I neither have the time nor the finances for that at the moment. So, I will focus on the first one!
I had initially planned to publish this post in the Foodies Bee Hive community, but in the end, this discovery deserved more to be shared here.
Ingredients for 2 glasses
- Half a lemon per glass
- A can of kombucha, any flavor
- Sparkling water
- A spoonful of honey
- Mint
Fresh mint or mint syrup?
Ideally, fresh mint should be used. But since I couldn’t find any, I opted for mint syrup. If you have the possibility to find some, go for it, it’s much better!
Syrup has a more industrial taste, is too sweet, and slightly changes the color of the mocktail. We don’t really care about the color of a drink, but it’s also interesting to create things that are pleasing to the eye.
Kombucha, what is it?
Before this recipe, I vaguely knew about kombucha but had never really looked into it. Besides, there isn’t any in my usual supermarket, I have to go to the organic store across the street.
Kombucha is a slightly sparkling fermented drink. It is obtained from sweet tea fermented with a culture of bacteria and yeast. If you do some research online, it is often appreciated for its digestive and probiotic benefits, but honestly, that’s not why I bought it.
I chose a peach-flavored kombucha, but there was also a ginger version. Which will be for next Friday!
Where are the doses in my recipe?
I didn’t indicate precise quantities because everything depends on the taste you want to achieve.
👉 More bubbles? Add more sparkling water.
👉 More sweetness? Put more honey.
👉 More acidity? Adjust the lemon to your liking.
The important thing is that the result pleases you!
The recipe
Preparing the lemon
Roughly cut half a lemon per glass. If it’s an untreated lemon, you can keep the peel. Otherwise, it’s better to remove it.
We used a lemon that had been sitting in the fridge for a week. It had already lost some of its juice in a recipe, but we didn’t want to throw it away. And we were right, I knew it would be useful!
Half a lemon is more than enough for a 250 ml glass.
Adding honey
Honey softens the acidity of the lemon and gives a slightly syrupy texture to the mocktail. You can replace it with sugar. I invite you to try both; I think you will see the difference!
Adding mint
I’m repeating myself, but if possible, use fresh mint. Here, I had to settle for syrup, which is too concentrated and sweet. If you opt for syrup, go easy on the dose.
Pouring the kombucha
I filled half the glass with peach kombucha. In hindsight, the ginger one would have been perfect for a spicier touch.
Pour slowly so you don’t lose the bubbles!
Topping up with sparkling water
Add sparkling water for even more bubbles. Then, if you have ice cubes, now is the time to add them! We just put our glasses in the freezer while finishing the preparation of the appetizer.
I tested different amounts of mint, and unsurprisingly, a lighter dose is much better. It allows the other flavors of the mocktail to be better appreciated.

- Acheter une table de mixage
Bon, je doute qu'@altheana valide le deuxième point. Et de toute façon, je n’aurais ni le temps ni les finances pour ça en ce moment. Je vais donc me concentrer sur le premier !
J’avais initialement prévu de publier ce post dans la communauté Foodies Bee Hive, mais finalement, cette découverte méritait plus d’être partagée ici.
Ingrédients pour 2 verres
- Un demi-citron par verre
- Une canette de kombucha, peu importe le goût
- De l’eau pétillante
- Une cuillère de miel
- De la menthe
Menthe fraîche ou sirop de menthe ?
Idéalement, il faut utiliser de la menthe fraîche. Mais comme je n’en ai pas trouvé, j’ai opté pour du sirop de menthe. Si vous avez la possibilité d’en trouver, foncez, c’est bien meilleur !
Le sirop a un goût plus industriel, est trop sucré et il modifie légèrement la couleur du mocktail. On se fiche un peu de la couleur d'une boisson, mais c'est aussi intéressant de créer des choses qui font plaisir aux yeux.
Le kombucha, qu’est-ce que c’est ?
Avant cette recette, je connaissais vaguement le kombucha, mais sans m’y être réellement intéressé. D’ailleurs, il n’y en a pas dans mon supermarché habituel, je dois aller au magasin bio en face.
Le kombucha est une boisson fermentée légèrement pétillante. Elle est obtenue à partir de thé sucré fermenté avec une culture de bactéries et de levures. Si vous faites quelques recherches sur Internet, elle est souvent appréciée pour ses bienfaits digestifs et probiotiques, mais honnêtement, ce n’est pas pour ça que je l’ai acheté.
J’ai choisi un kombucha à la pêche, mais il y avait aussi une version au gingembre. Qui sera pour vendredi prochain !
Où sont les doses dans ma recette ?
Je n’ai pas indiqué de quantités précises car tout dépend du goût que vous souhaitez obtenir.
👉 Plus de bulles ? Ajoutez plus d’eau pétillante.
👉 Plus de douceur ? Mettez plus de miel.
👉 Plus d’acidité ? Dosez le citron à votre convenance.
L’important, c’est que le résultat vous plaise !
La recette
Préparer le citron
Coupez grossièrement un demi-citron par verre. Si c’est un citron non traité, vous pouvez garder la peau. Sinon, il est préférable de la retirer.
Nous avons utilisé un citron qui traînait depuis une semaine dans le frigo. Il avait déjà perdu un peu de son jus dans une recette, mais nous ne voulions pas le jeter. Et nous avons bien fait, je savais que ça allait servir !
Un demi-citron suffit largement pour un verre de 250 ml.
Ajouter le miel
Le miel adoucie l’acidité du citron et donne une texture légèrement sirupeuse au mocktail. Vous pouvez le remplacer par du sucre. Je vous invite à essayer les deux, je pense que vous verrez la différence !
Ajouter la menthe
Je me répète, mais si possible, utilisez de la menthe fraîche. Ici, j’ai dû me contenter de sirop, qui est trop concentré et sucré. Si vous optez pour du sirop, allez-y doucement sur la dose.
Verser le kombucha
J’ai rempli moitié verre avec du kombucha à la pêche. Avec du recul, celui au gingembre aurait été parfait pour un côté plus épicé.
Versez lentement pour ne pas perdre les bulles !
Compléter avec de l’eau pétillante
Ajoutez de l’eau pétillante pour encore plus de bulles. Ensuite si vous avez des glaçons, c'est le moment de les intégrer ! Nous, on a simplement mis nos verres au congélateur le temps de finir la préparation de l’apéro.
J’ai testé différentes quantités de menthe, et sans surprise, une dose plus légère est bien meilleure. Elle permet de mieux apprécier les autres saveurs du mocktail.
