Can you guess what I cooked just by looking at the ingredients? It's not the complete recipe in the photo, though. It's a noodle dish, and the noodles are submerged in water to soften, so I only took photos of the aromatics and mostly toppings.
This dish is called "Pancit Malabon." It's made with thick rice noodles and gooey shrimp sauce. The preparation of this dish took a while, from making tinapa flakes, toasted garlic, annato oil, and a shrimp stock, to preparing to saute the sauce and make the toppings. You can have options to make the dish easy to prepare by buying ready-to-use fish flakes, shrimp bouillon, and annato powder, but I like to make it the hard way. lol I just believe that the food will taste great if you put effort and love into preparing it.
The reason why I prepared a special noodle dish is that it was my father-in-law's 61st birthday, and we want to celebrate it even though he is miles away. They are having a little party back home, and we wish we were there to celebrate with him. We witnessed how happy he was during the video call.
We must always use every opportunity to show our parents that we care because they aren't getting any younger.
