There’s nothing better than prepare your own loaves of bread by yourself at home. In this posts I will share one of my recipes to prepare home made bread by yourself using simple ingredients.
Bread Ingredients:
- 900 gr of bread flour T45 or 11.3 protein
- 540 gr of water(I prefer to use bottle water)
- 18 gr of salt
- 30 gr of flaxseed
- 6 gr of dried yeast
- 2 spoon of olive oil
For the bread preparation, Please follow the steps below:
- In a bowl mix the flour with the yeast when they still dried and In the stand mixer add the flour, water, and the olive oil and using the dough hook combine all of them until it mixed and you see a soft dough stop the mixer and just leave it for 30 minutes covered with a wet clothe(leave resting the dough this way is called autolyse where gluten bonds begin forming).
- After 30 minutes passed add the salt and turn on the mixer and knead the dough for 10 minutes in medium speed.
- Separate the dough in 3 portions( in my case was 573gr each) and then leave them covered in a bowl with wet clothe for 1 hour or until they doubles their sizes.
- Form the loaves on a floured surface and put them in the loaf pan and wait for 1 hour to raise again. This could take a little longer depending of the environment temperature(in my case the temperature is 28C)
- Turn on the oven and preheat to 200C for 15 minutes before you put the dough into the oven.
- Cut with knife the dough and spray with water; and put the loaves into the oven and spray the oven with water, this will help the bread to raise more and not to get dry or burn the top so quick; and remember after 20 minutes passed move the position of the loaves to cook evenly.
- Once another 20 minutes passed the top of the loaves must be light golden brown; so is time to bring them out and put them on a metal net and let them cold down.
Some tips: you could use a small tray on the base of the oven and put boiling water once you put the dough inside the oven. Also you could use a spray bottle with warm water and spray the oven, try to be careful when doing this.
I store the loaves inside a plastic bag covered with baking paper so in this way they will last longer and stay fresh.
