So this is a recipe I made for my baby boy when he was only 1.5 yrs old.
First time I try them I expected to get hard crunchy biscuits but actually they are quite soft. Maybe they are a little dry but I don't know, it depends on everyone's preferencies.
The choco topping is brilliant! Maybe that's what make these biscuits moist and nice!
Here's the recipe, I hope it will be useful for you too!
Ingredients:
- 1 cup coconut flakes
- 1/3 cup oats
- 1/3 cup cranberries and raisins combined
- 1 tbsp peanut butter
- 1 tbsp coconut butter
- 2 ripe bananas
- 1/2 tbsp pumpkin spices
- 1 si 1/2 tbsp ground flax seeds
- 1 si 1/2 tbsp water
- 1 tbsp honey
For the chocolate topping:
- 1 tbsp cacao or carob
- 1 tbsp honey
- 1 tbsp coconut butter
You can skip the cranberries and raisins if you're afraid of choking hazard. I almost gave them up myself for the same reason. But making these biscuits for the first time, I wanted to follow the recipe just because I didnt wanted to be frustrated in case they wouldn't turned out "good to eat" in the end...(I don't know from where or which website I found the recipe).
You can also replace peanut butter with almond butter or stick with coconut butter only .
Instructions
Actually, the recipe is very simple to follow.
Preheat oven to 175°C.
You can put bananas first in a bowl and mash them with a fork.
Add all ingredients on the same bowl and mix everything until you have a nice dough.

From the composition, start rolling the dough into small balls on a baking sheet.

Then flatten them with your palm.
Place them into oven and let them around 20-30 minutes, depending on your oven.
They're ready!

Now, start with the chocolate topping. Put all three ingredients into a small pot until coconut butter and honey are disolved. Mix everything and stir a couple of times then simply pour it onto the biscuits.

That would be all with this recipe! I like that you put everything in one bowl and you got it for there!
Once you have all ingredients on the table, there's no much left to do.
You can sprinkle some coconut flakes too if you want, but maybe this is not necessary.
Easy recipes are the best, especially when you have small kids around hehe 👶.
