Hi there how do you cook rice in your country, over here in Nigeria we have different kinds of rice being eaten in occasions like wedding, funerals, child dedication etc
We have different type of rice, long grain, medium and short grain rice,one funny thing is that each of these rice has their specific feature and serve different purposes.
Now let's have a run down of different rice cooked in Nigeria.
1. Nigeria Jellof rice
Ingredients
3¾ cups (750g) long grain parboiled rice.
2-3 cups Tomato Stew.
Chicken (whole chicken, drumsticks or chicken breast)
Pepper and salt (to taste)
2 medium onions.
3 Knorr cubes.
2 teaspoons thyme.
2 teaspoons curry powder (Nigerian curry powder)

2. Native rice
Ingredients
2 1/2 cups parboiled long grain rice
1 large onion chopped
1/2 cup Red Palm oil
2 Tbsp Tomato paste
1 tsp salt
1 tsp bouillon powder
2 Tbsp Fermented Iru Locust beans.
1 cup okporo dried prawns- remove head and tails
2 Tbsp ground crayfish
1/2 Tbsp ground Cameroon pepper
1/2 Tbsp crushed pepper flakes
1/2 large Red bell pepper
4 cups Meat stock or a combination of meat stock and water to make 4 cups
1 1/2 cup chopped spinach
I medium size smoked fish deboned and cleaned
Instructions
Oven method:
Wash rice till water runs clear. Set aside in sieve to drain while you prepare the sauce.
Sauté chopped onions in palm oil, add tomato paste, and bouillon powder. Stir to combine.
Add the crayfish, smoked fish, Iru, Cameroon pepper, pepper flakes and chopped red bell pepper. Stir to combine.
Pour in the half of meat stock and bring to boil.
Preheat oven to 400 F
Spray your baking dish with cooking spray
Pour washed rice into the baking dish
Pour sauce over rice and stir
Pour the rest of the meat stock in and stir. Taste for seasoning and adjust accordingly.
Add the dried prawns and Cover baking dish tightly with foil.
Bake on lower rack of oven for 1 hour
Bring out baking dish, fluff the rice then stir the chopped spinach enjoy.
Stove top method:
Wash rice till water runs clear. Set aside Prepare sauce like above but this time add the meat stock at once.
When sauce is ready, turn off heat. Taste for seasoning and adjust accordingly.
Pour in the washed rice, add the prawns. Stir to combine. Taste for seasoning and adjust accordingly.
Turn heat back on, cover pot tightly ( you can use foil) and let rice cook on medium heat for 30 mins by this time all the liquid should have been absorbed.
Check rice for doneness. Turn off heat, fluff rice then store in the chopped spinach. Enjoy.

Note:- The difference between Nigerian jellof rice and Nigerian native rice is that tomato is used in cooking jellof rice while Palm oil is used in cooking the native rice.
3. Nigeria Fried rice
Ingredients
2 Cups cooked Rice
1 Cup Mixed Vegetables I used Carrots, Sweet Peas, Sweet Corn and Green Beans
1 cup Onion diced
2 Scallions
1 Cup Beef Liver Cubed
1/2 Teaspoon Thyme
1 Teaspoon Curry powder
1/2 cup Chicken stock
1 Stock cube
3 Tablespoons Oil for frying
Salt to taste
Instructions
Add the parboiled Rice to the stock and cook until the water is dried up.
Preheat the oil in a Pan, throw in the Onions and fry for a minute or two, add the scallions, mixed vegetables and the seasonings ( Thyme, Curry Powder, Salt and Stock Cube)
Throw in the rice and stir-fry for about 3 to 5 Minutes. Take it off the heat and serve

4. Nigeria Coconut rice
Ingredients
2 tbsp coconut oil(or any oil you prefer)
1 cup diced red onions
½ tsp ground pepper
½ tsp curry
½ tsp oregano
½ tsp salt
2 maggi cubes
⅛ cup crayfishblended
3 habanero peppers(chopped)
1 cup sweet peppers(chopped)
2 cups coconut milk
1 ½ cup long grain parboiled rice
Instructions
To a medium sized pot, heat up your oil and throw in your chopped red onions. Fry until the redness starts to fade.
Add in your crayfish, peppers, curry, salt, oregano, maggi cubes, habanero peppers and sweet peppers. Stir for about 5 mins
Pour in your coconut milk and stir with the other ingredients
Add in your rice and cook for 45 mins on medium heat
Serve and Enjoy!
