Hablemos de Cacao y Chocolate/ Let's talk about coca and chocolate

He decidido con mi primer post traerles parte del tema que más ha atrapado mi atención en el área de agronomía por su alto componente cultural, lo cual lo converte no solo en un cultivo frutal más, sino, como su nombre lo indica, en el alimento de los dioses Theobroma cacao L. Y no es percepción actual, se ha descubierto que el cacao fue utilizado inclusive como medio de pago en el imperio Azteca y a lo largo de la historia su recolección ha sido aprovechada de variedad de maneras en las diferentes culturas a las que ha llegado. Hoy en día, gracias a los avances en la química, siguen encontrandose usos para las diferentes partes del fruto.

En el presente post les ofrezco un punto de vista sociocultural e industrial del consumo del cacao en la fabricación de alimentos y golosinas, y la identificación de los aspectos que influyen en la calidad del chocolate. Espero sea de su gusto y aprovechamiento. Sin más preambulo, comenzamos.

Mientras más nos adentramos al mundo del cacao más nos damos cuenta que esa masa marrón que consumimos en variedad de paquetes está tristemente lejos de ser chocolate. Y es que, claro, lamentablemente la oferta de chocolate de una calidad aceptable para la bombonería es sumamente limitada, por lo cual las industrias de alimento han tenido que recurrir a acompañantes más abundantes como la leche, la manteca vegetal y el azúcar y que al final terminaron gustandonos con ese montón de cosas ajenas al cacao a las que tan acostumbrados nos tiene la industria también con otros productos.

Quizas en este punto esten pensando: pero en mi país venden chocolate con más del 70% de cacao. Y si, ciertamente es así, en muchos paises venden barras de chocolate con 65 a 85% de cacao pero en esos casos no es un chocolate apto para bombonería o consumo directo, es un chocolate mas bien dirigido a preparaciones de repostería o para acompáñarlo con leche y hacer bebidas (en Venezuela se le llama comunmente "chocolate de taza"), es un chocolate amargo y he aquí posiblemente la causa de que la industria nos haya seducido tanto con las mencionadas diluciones del chocolate a menos de 30% y es que así es como logran hacer que el cacao amargo sea más agradable, sobre todo en países tropicales.

Respecto a esto quiero contar una anécdota acerca del clima y el consumo de chocolate. Si, suena raro, pero por eso no se debe sacar conclusiones a priori sobre nada. Resulta que mi viaje más reciente a Europa, a casa de mi hermano, fue un mes de diciembre, ya la estación de invierto estaba instalada y decidí salir a dar un paseo en bicicleta. El pueblo donde vivía en aquel momento era bastante pequeño y medieval, a escasos 15 minutos de la ciudad pero separado de ella por una franja de bosque de pino bien tupido con caminerías. A ese bosque se accedía desde una colina, desde la cual me dejé caer plácidamente hasta adentrarme en el bosque, un recorrido de al rededor de 1.5 Km. la temperatura rondaba los 5°C, después de una breve pedaleada por el bosque, el frio comienza a hacer estragos en mi cuerpo acostumbrado al trópico, por lo cual decidí volver a la casa. Subir la colina se convirtió en una odisea, tuve incluso que bajarme de la bicicleta a caminar un tramo. Al llegar a la casa fatigado y helado busco una caja de chocolates que me habían regalado en días anteriores, la cual contenía chocolates con diferentes concentraciones de cacao siendo los de 86% la más alta y la más amarga también, por lo cual los había venido rechazando. Pero aquél momento de fatiga no estaba muy selectivo y tomé uno de esos y ¡sorpresa! Todo aquel amargor se había convertido en una calurosa acogida de vuelta al hogar, un bocado revitalizante y hasta lo sentía más dulce que en ocaciones anteriores. Fue entonces cuando comprendí que el gusto por la concentración y calidad del cacao en los chocolates no solo depende simplemente de las preferencias de cada quien sino también de las condiciones del tiempo en las que se encuentre el consumidor, de allí ha de provenir el gusto de los europeos, especificamente de los suizos, famosos por su chocolatería, por el consumo de cacao de calidad y en altas concentraciones en la preparación del chocolate.

Y es en este punto es necesario explocar una generalidad botánica y es que el cacao se divide en tres tipos según su origen: Alto amazónico, cuyo origen yace en el amazonas ecuatorial y sur de Brasil, Criollo, cuyo origen se ubica en el sur de lago de Maracaibo, Venezuela, y finalmente el producto del cruce de estas dos variedades puras: el cacao trinitario, cuyo origen se estima en el delta del rio orinoco, Venezuela y posteriormente fue dispersado por las poblaciones originarias al norte del país y a la Isla de Trinidad, a quien debe su nombre.

Cada grupo de cacao posee caracteristicas diferentes siendo el cacao criollo el de sabor y coloración más suave habiendo algunos clones que ameritan cuantificar el sabor a cacao de su almendra al momento de ser evaluados organolepticamente debido a que es sumamente tenue al punto de ser más parecido al de las nueces, mientras que los cacaos del grupo altoamazónico presentan caracteristicas en el otro extremo de los sentidos: tiene una coloración fuerte y un sabor amargo dominante. Como es de esperarse, el grupo de los trinitarios presenta caracteristicas de ambos dependiendo del clon, sin embargo, en todos predomina un sabor fuerte, al ser una caracteristica dominante y, por ende, geneticamente propensa a ser heredada por la descendencia.

Y entonces ¿por qué no fabrican chocolates de cacao criollo a nivel industrial? La respuesta es tristemente sencilla: porque no hay suficiente.

Y es que el cacao criollo tiene la particularidad de ostentar unos rendimientos sumamente bajos en comparación con sus pares amazónico o trinitarios por lo cual su producción es altamente codiciada por las mejores chocolaterias finas del mundo, además es en gran medida dependiente su ambiente de origen, por lo cual su cultivo puede hacerse de manera exitosa unicamente en sus rangos altitudinales originarios, cuya disponibilidad no es la que desearíamos como humanidad por diferentes razones. Mientras que los cacaos trinitarios, al gozar de lo que en genética se denomina "vigor híbrido", son unas plantas bastante resistentes y altamente productivas además de capaces de llevar a cabo su ciclo año tras año en condiciones que no son las más favorables para ellas, por ello es el tipo de cacao más abundante en el mundo, del cual existen grandes plantaciones en el continente africano, convirtiendolo en la región productora y exportadora de cacao de mayor volumen a nivel mundial. De este tipo de cacao es del cual obtenemos el polvo de cacao utilizado ampliamente en la fabricación de postres y algunas comidas y la manteca de cacao de fines cosméticos.

A estas alturas estoy seguro que su percepción del chocolate no es la misma que al iniciar la lectura. Seguramente les han llegado a la mente varias dudas: ¿Como se determinan los porcentajes de cacao en los chocolates?, ¿En qué consisten los mismos?, ¿En qué consiste el resto de la composición de los diferentes chocolates?.

Durante mi trabajo en la coordinación de la rehabilitación y ampliamiento de una hacienda cacaotera conocí a un experto empírico del cacao: Jairo Mora. Quien es originario del Estado Sucre, al noreste de Venezuela, región historicamente productora de cacao, donde se pueden encontrar aun cacaotales de la época colonial venezolana y germoplasma único en el mundo. Jairo tuvo contacto con el manejo del cacao desde temprana edad, con él practiqué varias labores culturales que se aplican a la plantación de cacao en diferentes edades, cosas que ya había aprendido con mi tutor de tesis, el Prof. Dr. Jhonathan Torres de la UCLA pero que lamentablemente no habíamos tenido la oportunidad de poner en práctica.

Jairo también es un conocedor del chocolate, como es de esperarse, el fue quien me explicó que el porcentaje de chocolate al que refiere quien lo fabrica consta de todos los componentes provenientes del procesamiento de la almendra que se le añadan a la mezcla con la que se harán las barras, es decír: polvo de cacao, manteca de cacao, aceite, licor de cacao, nips enteros, etc. y sus complementos: azúcar, vainilla, grasas vegetales diferentes a las del cacao, etc.

De lo anterior podemos concluir entonces que un chocolate de alta calidad debe contener un porcentaje de cacao elevado y este debe ser criollo por su sabor suave, poco mezclado con otros tipos de cacao para preservar el valor de sus características, esto dará como resultado un chocolate sumamente aromático con una textura muy particular, que se derrite lentamente en la boca y despierta sensaciones en el paladar que ningún otro postre podría.

Today, thanks to advances in chemistry, uses are still being found for the different parts of the fruit.

In this post I offer a sociocultural and industrial point of view of cocoa consumption in the manufacture of food and candies, and the identification of the aspects that influence the quality of chocolate. I hope you will enjoy and benefit from it. Without further ado, let's begin.

The more we delve into the world of cocoa, the more we realize that the brown mass we consume in a variety of packages is sadly far from being chocolate. And, of course, unfortunately the supply of chocolate of an acceptable quality for confectionery is extremely limited, so the food industries have had to resort to more abundant companions such as milk, vegetable shortening and sugar, and that in the end ended up liking us with that bunch of things alien to cocoa to which the industry has us so accustomed with other products as well.

Maybe at this point you are thinking: but in my country they sell chocolate with more than 70% cocoa. And yes, it is certainly so, in many countries they sell chocolate bars with 65 to 85% cocoa but in those cases it is not a chocolate suitable for confectionery or direct consumption, it is a chocolate rather aimed at confectionery preparations or to accompany it with milk and make drinks (in Venezuela it is commonly called "cup chocolate"), It is a bitter chocolate and this is possibly the reason why the industry has seduced us so much with the aforementioned dilutions of chocolate to less than 30%, because this is how they manage to make bitter cocoa more pleasant, especially in tropical countries.

In this regard, I would like to tell an anecdote about the climate and chocolate consumption. Yes, it sounds strange, but that's why you shouldn't jump to conclusions about anything. It turns out that my most recent trip to Europe, to my brother's house, was in December, the winter season was already installed and I decided to go for a bike ride. The village where I lived at the time was quite small and medieval, just 15 minutes from the city but separated from it by a strip of dense pine forest with paths. This forest was accessed from a hill, from which I let myself fall placidly into the forest, a journey of about 1.5 km, the temperature was around 5 ° C, after a short ride through the forest, the cold begins to wreak havoc on my body accustomed to the tropics, so I decided to return to the house. Climbing the hill became an odyssey, I even had to get off the bike to walk a stretch. Arriving home, fatigued and frozen, I looked for a box of chocolates that I had been given in previous days, which contained chocolates with different concentrations of cocoa, being the 86% the highest and also the most bitter, which is why I had been rejecting them. But that moment of fatigue I was not very selective and I took one of those and surprise! All that bitterness had turned into a warm welcome home, a revitalizing bite and it even felt sweeter than on previous occasions. It was then that I understood that the taste for the concentration and quality of cocoa in chocolates not only depends simply on the preferences of each person but also on the weather conditions in which the consumer is, from there must come the taste of the Europeans, specifically the Swiss, famous for their chocolate, for the consumption of quality cocoa and in high concentrations in the preparation of chocolate.

And it is at this point it is necessary to exploit a botanical generality and is that cocoa is divided into three types according to their origin: High Amazonian, whose origin lies in the equatorial Amazon and southern Brazil, Criollo, whose origin is located in southern Lake Maracaibo, Venezuela, and finally the product of the crossing of these two pure varieties: Trinidadian cocoa, whose origin is estimated in the delta of the Orinoco River, Venezuela and was later dispersed by the native populations to the north of the country and to the island of Trinidad, to whom it owes its name.

Each group of cocoa has different characteristics, being the criollo cocoa the one with the mildest flavor and coloration, with some clones that merit quantifying the cocoa flavor of its kernel when evaluated organoleptically because it is very faint to the point of being more similar to nuts, while the cocoa of the Alto-Amazonian group has characteristics at the other extreme of the senses: it has a strong coloration and a dominant bitter flavor. As expected, the trinitario group has characteristics of both depending on the clone, however, a strong flavor predominates in all of them, being a dominant characteristic and therefore genetically prone to be inherited by the offspring.

So why don't they manufacture criollo cocoa chocolates at an industrial level? The answer is sadly simple: because there is not enough of it.

Criollo cocoa has the particularity of having extremely low yields compared to its Amazonian or Trinidadian counterparts, which is why its production is highly coveted by the best fine chocolate factories in the world. In addition, it is largely dependent on its environment of origin, so its cultivation can be done successfully only in its original altitudinal ranges, whose availability is not what we would like as humanity for different reasons. While the trinitario cocoa, enjoying what in genetics is called "hybrid vigor", are quite resistant and highly productive plants and able to carry out its cycle year after year in conditions that are not the most favorable for them, so it is the most abundant type of cocoa in the world, of which there are large plantations on the African continent, making it the largest cocoa producing and exporting region in the world. It is from this type of cocoa that we obtain the cocoa powder widely used in the manufacture of desserts and some foods and cocoa butter for cosmetic purposes.

By now I am sure that your perception of chocolate is not the same as it was when you started reading this. Surely several questions have come to your mind: How are the percentages of cocoa in chocolates determined, what do they consist of, what does the rest of the composition of the different chocolates consist of?

During my work in the coordination of the rehabilitation and expansion of a cocoa farm I met an empirical cocoa expert: Jairo Mora. He is originally from the State of Sucre, in the northeast of Venezuela, a historical cocoa producing region, where you can still find cocoa plantations from the Venezuelan colonial era and unique germplasm in the world. Jairo had contact with cocoa management from an early age, with him I practiced several cultural labors that are applied to the cocoa plantation at different ages, things that I had already learned with my thesis tutor, Prof. Dr. Jhonathan Torres from UCLA but unfortunately we had not had the opportunity to put into practice.

Jairo is also a chocolate connoisseur, as it is to be expected, he was the one who explained to me that the percentage of chocolate referred to by the chocolate maker consists of all the components coming from the processing of the almond that are added to the mixture with which the bars will be made, that is to say: cocoa powder, cocoa butter, oil, cocoa liquor, whole nips, etc. and its complements: sugar, vanilla, vegetable fats other than cocoa, etc.

From the above we can conclude then that a high quality chocolate must contain a high percentage of cocoa and this must be criollo for its mild flavor, little mixed with other types of cocoa to preserve the value of its characteristics, this will result in a highly aromatic chocolate with a very particular texture, which melts slowly in the mouth and awakens sensations on the palate that no other dessert could.
