There is some nice hiking in China. On this trip, I slept on top of the great Wall one night and in Hong Kong, slept on a remote beach along the South China Sea.
Flights are fairly inexpensive to HK and you probably don't need a visa to enter (depending what country you're from); but will need a visa if you want to go to Mainland China...so it is not difficult getting there.
You can eat less expensive, but I try to limit my carbs. You can eat for a few dollars if you like noodles and rice
