Yesterday Bianca was out working and I was in charge of dinner.
I wanted to make something she could eat when she got home around 9 pm but I didn't have much time myself to make something amazing.
This happens sometimes to all of us I imagine :)
In a pinch, I usually go for pasta bolognese with vegetables.
It's probably not the most sophisticated dish on the planet but it's healthy and fast to prepare.
I made it loads of time when I was single.
I think anyone can make this dish and it beats a microwave dinner :)
Let's cook.
Ingredients: Spaghetti, red onion, red pepper, mushrooms, grated cheese, rocket salad, pasta sauce in a bag (or jar) and ground beef (not in picture).
Start with browning the meat. Put a little bit of oil in the pan and stir the meat until it's almost cooked. It does not matter if there are some raw pieces (it will all cook in the sauce).
Cut the vegetables while the meat is cooking and add them to the pan.
Stir the vegetables with the meat and cook for around 5 minutes.
Add the sauce to the mixture. The sauce I used was very thick so I added some water.
Put the lid on the pan and let simmer while you cook the pasta.
For pasta I choose spaghetti because we had an open bag. If you give the pasta a twist with both hands it will feather out and it will be easier to put it in the pan.
The secret is to undercook the pasta and finish it in the sauce. Pasta gets soft because it absorbs water so if you finish it in the sauce it will absorb the sauce and taste much better. This will work for almost any pasta dish. I usually cook the pasta 2 minutes less than recommended on the package. The spaghetti I cooked for 5 minutes. You can see it still 'looks' a little bit hard.
Stir the spaghetti in the sauce and just let it sit there for 2-3 minutes. It will absorb the sauce and will get cooked perfectly.
End result: A very fast and healthy plate of pasta in under 20 minutes. I added some cheese on top and made a quick side salad with some rocket and olive oil. It was delicious! Bianca like it a lot too (3 hours later!).
