
I had a great post all written in my head last night right before I fell asleep. I told my tired self that I would remember the great post topic in the morning.
Morning came very early due to hubby working at home. The post topic was just a splash of an idea now as sleep had washed some of it away.

Checking the card catalog in my head I added a paperclip to the card filed under post ideas. I would look at this idea again in a few hours when I was more awake. Wakefulness came and went along with the subject card and blue paperclip holding my idea in place.
Was the idea a "Help save the World" kind of a post that is now lost in the depths of grey matter? I think it was, yet I could be wrong. I am not sure. Yet.
Let me do some basic fundamentals of living and get back to you. Sometimes doing the most mind-numbing things brings your true brain back to life.

Let's test this theory out, shall we?

Alarm! Set my phone alarm for 1:30 PM and tell Hubby to set his too in case I do not wake up to my alarm. I have an appointment with someone on Skype at 2 PM.

hmmm... All I did was fill the dishwasher and that tidbit came out. Let's see if there is anything else I will remember as I finish my mundane chores.
Lunch dates on the internet! I remembered what I wanted to write about!! Yeah! I will just jot the idea down here while I go finish the rest of the stuff I need to get done. I will be back soon.

Three hours later.


My kitchen is finally all clean.
I want to know how having one more person home all day and night can add seven gazillion more dishes each day!
Really! I am not eating more.
How do you fill two sinks full of dishes before noon?
We haven't even gotten to Dinner where you use the most dishes of any meal. It's a mystery to me.


Looking at my clean kitchen I thought back to last night and how much I wanted cake.
Okay, I lied. I wanted cream cheese frosting with a little bit of carrot cake under it.
Well, that is kind of a lie too. I really, wanted a treat because I have not been feeling well.
My favorite treat to get when I am not feeling well is Qudobia's 3 Cheese Nachos with the chips on the side. Qudobias is closed until May?
What is the next best thing besides 3 cheese nachos? Cake of course!
To Google 'easy chocolate cake' I went.

Yes, I know...but

I don't have carrots because @EnchantedSpirit made me eat all my carrots today. I didn't have cream cheese either. I had some powdered pure cocoa in the cabinet because it is not sweet so hubby will not eat it. Chocolate for a cake was all I had to work with.
Life is hard.
Sometimes you just have to settle for chocolate cake.

Google was playing nice tonight. The first recipe Google showed me was called One Bowl Chocolate Cake III. I looked at the ingredient list and knew I had everything to make this cake. It was now 1:00 AM.

Did I really want to make a chocolate cake at 1 am? No.
Did I really want a treat? Yes.
Could I have made it tomorrow before 1 am? Like when I wake up and the sun is out? Not really because then my kitchen will be a mess again. Plus I will be tired and not want to clean in order to bake a cake.

I will say the cake is as easy as the 2,000 reviews say it is. I did add 1 cup of cocoa powder as everyone suggested. I put it in a bunt pan...because...I had one that I do not think I have ever used. One drawback of reading the review comments in recipes.
The cake, after cooling in the pan for 20 minutes, slid right out. No sticking at all. I was happy. Kind of.
I now had to wait for the cake to cool to frost it. I opened the kitchen window to let in the cold air to help cool the cake faster. Should I have waited until tomorrow to frost the cake? No. See the above kitchen issues for the reason why.
Soooooo about every 3 minutes, I touched the cake to see if it was cool enough to frost. It never was. I frosted it anyway. It now has a nice thin chocolate glaze on it that happened to pool on the bottom of the glass plate. Don't judge. I just wanted my treat!

I realized I was going to be eating a ton of chocolate very late at night and then have to go to sleep. Yeah, I am not the least bit tired right now. Opposite in fact. I am kind of jonesing from all the chocolate and sleeping will prove interesting.

Moral of the story?
There are times you have to frost a cake before it's ready because sometimes YOU need to come first.
or
It is okay to have cake and eat it too! Just not every night!!
