This is an AMAZING way to curb your cravings for sweets if you are on a low-carb ketogenic and/or Paleo diet! These are high-fat chocolate treats that look sort of like macroons, but have their own special magic! You can of course use this recipe as a base and improvise as you see fit! Please enjoy! Dry Ingredients:
-16 oz shredded coconut
-3/4 cup hemp seeds for a nice protein boost! (order from Amazon)
-1 cup erythritol or xylitol (order from Amazon)
-1/2 cup raw cacao powder (Amazon)
-1 cup cacao nibs (Amazon)
-1 tsp sea salt
Wet Ingredients:
-1 tsp vanilla extract
-16 oz cacao butter (Amazon)
-1 stick of butter (vegans can use coconut oil instead)
Mix together raw cacao butter or cocoa butter (which is the same, only its much more processed) and butter (both melted together and mixed in a pan on VERY low heat, just warm enough to melt butters).
Combine all dry ingredients in a big mixing bowl and stir them together to make it homogeneous.
After the dry ingredients are nice and mixed, pour in the butter cacao oil mixture and stir until everything is thoroughly mixed together.
Take an ice cream scoop and use it to for half-spherical scoops and lay them on a cookie sheet, or some sort of flat Tupperware, or whatever works.
After you've scooped all the mixture into half-spheres, put them into the fridge for an hour to harden.
Voila, finished! You can transfer the hardened macroons to any storage container of your choosing and keep in the fridge. You can also store them at room temp if you want them to be nice and soft. But I usually store the main bulk in the fridge, and take out smaller batches to warm back up to room temp. Or just eat cold straight from fridge, but they are pretty dense from the fridge temp.
