Today, I wanted to share a little something about the place I call home and the awesome food we eat. Every country in Latin America is unique, and I feel like Ecuador doesn’t get nearly enough love!
In my country, the plantain is a total rockstar in the kitchen. Sure, other places use it too, but I’m convinced we’ve taken it to a whole new level of awesome—and I’ve got the proof to back it up!
Just like Italy turned pasta into pure magic or Switzerland built a chocolate empire, Ecuador has pushed the plantain to its absolute peak. Maybe it’s out of necessity—not because anyone’s going hungry (no way!), but perhaps we’ve been a bit shy about shouting it from the rooftops. We haven’t written fancy cookbooks or had Ecuadorian foodie influencers taking over the world… yet. But if you live here, you know: banana’s on the breakfast table, it’s the star of lunch, and it even sneaks into dessert! In the hands of a skilled cook, a banana is like a giant block of marble in the hands of a sculptor—ready to be transformed into something epic.
Over the past month, I’ve been on a mission to snap pics of the banana dishes I eat all the time. My top faves? The bolón, tigrillo, and corviche (usually stuffed with a tasty tuna called albacore).
I just want to note that all these photos are mine, snapped of dishes that yours truly devoured right after their photo shoot! :-)

Hoy quería compartir algo sobre el lugar donde vivo y la comida tan rica que tenemos.¡Cada país de Latinoamérica es único, y creo que de Ecuador no se sabe lo suficiente!
En mi país, el plátano es una estrella total en la cocina. Sí, en otros lugares también lo usan, pero estoy convencido de que aquí lo hemos llevado a un nivel de excelencia, ¡y no lo digo sin sustento!
Así como Italia convirtió la pasta en algo mágico o Suiza se ganó su fama con el chocolate, Ecuador ha llevado al plátano verde al límite. Quizás por necesidad—no porque alguien pase hambre (¡para nada!), pero tal vez hemos sido un poco tímidos para presumirlo. No hemos escrito libros de cocina famosos ni tenemos influencers ecuatorianos conquistando el mundo con nuestra comida… todavía. Pero quien vive aquí, lo sabe: se desayuna plátano, se almuerza plátano y hasta se come de postre. ¡El plátano verde en manos de un buen cocinero es como un gran bloque de mármol en manos de un escultor, listo para convertirse en algo épico!
Durante el último mes, me propuse sacarle fotos a los platillos de plátano que como seguido. Mis favoritos son el bolón, el tigrillo y el corviche (este último suele ir relleno de un atún delicioso llamado albacora).
Quiero anotar que todas las fotos son mías, de platos que yo mismo me comí con gusto después de su sesión fotográfica. :-)
