Homemade Strawberry cheesecake without baking

Ingredients
- 125 g of almonds;
- 225 g of cashew + for decoration;
- 125 g pitted dates;
- a pinch of salt;
- 80 g strawberry + for decoration;
- 3 tablespoons of sugar;
- 2 tablespoons of lemon juice;
- a pinch of vanillin;
- 100 ml of coconut milk;
- 2 tablespoons of coconut chips - for decoration.
Cooking
Soak the almonds and cashews in water overnight. Blend dates, almonds and salt in a blender . Tamp the mass in a split ring with a diameter of 16 cm, placing it on a plate, and put it in the freezer while cooking the remaining ingredients.
Blender strawberries, 1 spoon of sugar and 1 spoon of lemon juice. Then punch in the blender cashews, vanillin and the remaining sugar and lemon juice. Pour in coconut milk and whisk until smooth. Add sugar if necessary.
Spread half the nut mass on the date layer. Whisk the remaining half with strawberry puree and spread on top. Put the cheesecake in the freezer for 1-2 hours. Decorate it with coconut, strawberries and nuts.
