Today I want to share with you a delicious salad that I prepared today to accompany my lunch dish: I mixed zucchini, tomato, potatoes, onion, beets and parsley. In this salad I combined the boiled potatoes and beets with other raw vegetables. Each ingredient brought its own flavor and texture, creating an irresistible and incredibly nutritious combination. The mild zucchini was perfectly complemented by the freshness of the tomato and the earthy sweetness of the beets. The potatoes added substance, while the onion gave it a crunchy and somewhat sweet touch. The parsley brought fresh aroma and a touch of color that made a colorful contrast with the other vegetables. What I liked most about this salad is its versatility. Perfect as an accompaniment to any meal or as a light main dish. Hoy quiero compartir con ustedes, una ensalada deliciosa que preparé el día de hoy para acompañar mi plato del almuerzo: mezclé calabacín, tomate, papas, cebolla, remolacha y perejil. En esta ensalada combiné las papas y la remolacha hervida con otros vegetales crudos. Cada ingrediente aportó su propio sabor y textura, creando una combinación irresistible e increíblemente nutritiva. El calabacín suave se complementó perfectamente con la frescura del tomate y la dulzura terrosa de la remolacha. Las papas añaden sustancia, mientras que la cebolla le dio un toque crujiente y algo dulzón. El perejil aportó aroma fresco y un toque de color que hizo un contraste de colores con los otros vegetales. Lo que más me gustó de esta ensalada es su versatilidad. Perfecta como acompañamiento para cualquier comida o como un plato principal ligero. Además, es fácil de preparar y se puede adaptar según los ingredientes que tengas a mano. We continue with the vegetables: carrot and zucchini. We wash it very well, peel the carrot and grate it through the coarse part of the grater. We also grate the zucchini, but we leave the skin on. Set aside.
Continuamos con los vegetales: zanahoria y calabacín. Lo lavamos muy bien, pelamos la zanahoria y rallamos por la parte gruesa del rallador. El calabacín lo rallamos también, pero le dejamos la piel. Reservamos.

Después lavamos y quitamos los palitos al perejil y cortamos chiquito y se lo agregamos a la ensalada.

Now it's time to make the vinaigrette you want to add to this salad. You can make any vinaigrette you like, it will be delicious anyway. In a small container I added the apple cider vinegar, black pepper and salt and stirred until these three ingredients are integrated.
Ahora toca a hacer la vinagreta que le agregue a gusto a esta ensalada. Usted puede hacer la que desee, que igualmente quedará riquísima. En un envase pequeño agregué el vinagre de manzana, la pimienta negra y la sal removí hasta que se integran estos tres ingredientes.
