Este postre combina la dulzura natural de la auyama con el sabor único del coco, creando una unión perfecta para cualquier ocasión o simplemente para disfrutar en familia, así como disfrutamos nosotros. Esta torta es fácil de preparar, pero al final su resultado fue genial.

La auyama o calabaza, aporta una textura suave y húmeda a la torta, mientras que el coco añade un toque crujiente y sabor. Además, es un postre que se puede adaptar a diferentes gustos. Puedes añadir especias para darle un sabor aún más especial.

-600 grams of pumpkin, -2 cups of wheat flour, -3 eggs, -1 tablespoon of baking powder, -1 coconut, - 2 tablespoons of vegetable oil, -1 cup of sugar, 1 tablespoon of cinnamon, -1/2 cup of water to boil the pumpkin.
-600 gramos de auyama o calabaza, -2 tazas de harina de trigo, -3 huevos, -1 cucharada de polvo de hornear, -1 coco, - 2 cucharadas de aceite vegetal, -1 taza de azúcar, 1 cucharada de canela, -1/2 taza de agua para hervir la auyama.

To begin the preparation, preheat the oven to 180 °C. Next, remove the skin from the pumpkin, wash it, cut it into small squares, and transfer it to a pot, where we add the water. We take the pot to the fire and cook until it softens. Once this texture is reached, turn off the heat. Without letting it rest, take it to a container and mash it with the help of a fork until you get a puree; set aside.
Para comenzar la preparación, precalentamos el horno a 180 °C. Seguido, retiramos la piel de la auyama o calabaza, la lavamos, cortamos en cuadros pequeños, y trasladamos a una olla, donde añadimos el agua. Llevamos la olla al fuego y cocinamos hasta que esta se ablande. Una vez alcanzada esta textura, apagamos el fuego. Sin dejar reposar, llevamos un envase y pisamos con la ayuda de un tenedor, hasta lograr un puré; reservamos.

Quitamos la concha y la parte marrón del coco, rallamos la pulpa.

Seguidamente, en el envase que hicimos el puré de auyama o calabaza, agregamos azúcar y los huevos. Batimos estos ingredientes muy bien con la ayuda de la batidora eléctrica.

Pasado el tiempo, revisamos el horno y hacemos la prueba del palillo. De estar lista, la torta, la retiramos del horno.
