Sometimes less is more and simple is the way to go! Inspired by the iconic English tea time cucumber sandwich, this combination is just sooooo fresh and delicious!!!
INGREDIENTS:
- white sandwich bread (needs to be super fresh otherwise it will break)
- egg salad (3 hard boiled eggs, a table spoon of quality mayo and sour cream, a splash of vinegar, salt, pepper, chives)
- radishes, chives (flowers), cucumber and spring onions from the garden
THE METHOD:
Arrange a layer of thinly sliced radishes on a piece of bread in the center (prevents a soggy bottom :)). Put a teaspoon of the egg salad over it, add thinly sliced spring onions and cover with the second piece of bread.
Press down hard with a cup or a heavy glass (turned upside down) to seal the edges. Cut around it with a sharp knife. Decorate your delicious pillows with cucumber slices and flowering chives.
AND THAT'S IT! SO SIMPLE!
