Greetings dear friends who love vegan food. Today I share with you a recipe that I like very much, it is a very common contour of our menu, it is rice, but in a somewhat different preparation than usual. The difference is that I wanted to make it seasoned, with many vegetables of my preference. Sometimes I used to add grated carrots and some slices of red or green bell pepper, on this occasion, I dispensed with the carrot and the bell pepper because by that time they had run out. I decided to prepare it with what I had in the fridge and I loved the result.
A few olives, capers, sweet corn, peas, zucchini, and of course, garlic and onion, good thing I had them, these were the ingredients of this delicious seasoned rice. This recipe is very simple, the rice is delicious, and can be served with any vegetable or simply eaten alone. To prepare this recipe I was inspired by a vegan rice that I ate in a restaurant a long time ago, as a main starter I remember that they served me an onion soup that was very tasty.
Ingredients
- 1 ½ cup white rice
- 1 medium onion
- 1 stalk of garlic
- 4 stuffed olives
- 5 capers
- ½ cup zucchini
- ½ cup sweet corn
- ½ cup peas
- Salt to taste
- 1 teaspoon turmeric
- Frying oil
- 3 cups of water
Preparation
1.-. Remove the skin from the onion, wash it well together with the garlic stalk, cut them into cubes and sauté them in a frying pan over medium low heat with a drizzle of oil. Season with a teaspoon of salt and let them cook until they have wilted.
2.- Wash the rice and add it to the frying pan where we have fried the onion and the garlic. Add the water, the zucchini and mix.
3.- Add the teaspoon of turmeric and mix. Then, chop the olives and capers and add them to the rice and mix again. In this step we rectify the salt point.
4.- When the rice is almost completely dry, add the sweet corn and peas. Mix and let it cook until the water dries completely.
All that remains is to serve and enjoy this delicious seasoned rice.

Saludos estimados amigos amantes de la comida vegana. Hoy les comparto una receta que me gusta mucho, es un contorno muy común de nuestro menú, se trata del arroz, pero en una preparación un tanto distinta a la de siempre. La diferencia radica en que quise hacerlo aliñado, con muchos vegetales de mi preferencia. A veces solía añadirle zanahoria rallada y algunas lajas de pimentón rojo o verde, en esta ocasión, prescindí de la zanahoria y el pimentón porque para ese momento se habían acabado. Decidí prepararlo con lo que tenía en el refri y resultado me encantó.
Unas cuantas aceitunas, alcaparras, maíz dulce, guisantes, calabacín, y claro, no podía faltar ajo porro y cebolla, que bueno que sí los tenía, estos fueron los ingredientes de este exquisito arroz aliñado. Esta receta es muy sencilla, el arroz queda delicioso, además de ser el acompañante de unas coquetas de cualquier vegetal o simplemente comerlo solito. Para preparar esta receta me inspiré en un arroz vegano que comí en un restaurante hace un buen tiempo, como entrada principal recuerdo que me sirvieron una sopa de cebolla que estaba muy rica.
Ingredientes
- 1 ½ taza de arroz blanco
- 1 cebolla mediana
- 1 tallo de ajo porro
- 4 aceitunas rellenas
- 5 alcaparras
- ½ taza de calabacín
- ½ taza de maíz dulce
- ½ taza de guisantes
- Sal al gusto
- 1 cucharadita de cúrcuma
- Aceite para freír
- 3 tazas de agua
Preparación
1.-. Retiramos la piel de la cebolla, la lavamos bien junto al tallo de ajo porro, los cortamos en cubos y los ponemos a sofreír en una sartén a fuego medio bajo con un chorrito de aceite. Condimentamos con una cucharadita de sal y dejamos cocinar hasta que se hayan marchitado.
2.- Lavamos el arroz y lo incorporamos a la sartén donde hemos sofreído la cebolla y el ajo porro. Añadimos el agua, el calabacín y mezclamos.
3.- Agregamos la cucharadita de cúrcuma y mezclamos. Luego, cortamos las aceitunas y alcaparras para enseguida incorporarlas al arroz, volvemos a mezclar. En este paso rectificamos el punto de sal.
4.- Cuando el arroz se haya secado casi del todo, agregamos el maíz dulce y los guisantes. Mezclamos y dejamos que culmine su cocción, hasta que el agua se seque por completo.
