The truth is that animation is brutal, especially in action scenes and in the way they represent the "men's devouring." But what really elevates it is that complex story that is gradually revealed. At first it is a bit confusing, as you say, but when everything starts to fit, boom! It is a revelation.
And yes, episodes 7 and 8 ... UF! They are devastating. That doctor's dilemma, seeing how despair leads him to ask for something so unthinkable, and Maru's reaction is pure humanity in the midst of a desolate world.
