Yeah...it's indeed very difficult to stay away from gluten 😅, especially in baking area.
Otherwise it's probably not very torturing for Indonesian who mostly eat rice as carbs source in main dish instead of bread or pasta 😜.
For fritters fans it's becoming a little problem again, but you're right...cornstarch is a good helper, potato starch is also an option.
BTW...you can also try sweet potatoes and normal potatoes to make cakes.
There's even traditional indonesian cake aka "jajan pasar" which is typically made of potato flour: "Kue Lumpur".
It's very delicious and easy to make. You don't need an oven for that either 😊.
Oh you just reminded me of a big mistake I made.
I totally forgot to buy some cake molds when I was there 😬.
