Here is a VERY healthy and nutritious recipe, I will explain in an easy and simple way how to prepare a delicious "cream of beet soup with potatoes and cheese". To make our dish taste even tastier and more substantial, I thought of decorating it with “chives sautéed in butter”, the result was very delicious!

A continuación, les presento una receta MUY saludable y nutritiva, les explicaré de forma fácil y sencilla como preparar una deliciosa "crema de remolacha con patatas y queso". Para que nuestro platillo tuviera un sabor MÁS sabroso y sustancioso, se me ocurrió decorar con "cebollín sofrito en mantequilla", el resultado fue muy exquisito!
INGREDIENTS: 3 beets, 1 potato, 1 teaspoon butter, 2 cups milk, white cheese, chives, pepper and salt to taste.
INGREDIENTES: 3 remolachas, 1 patata, 1 cucharadita de mantequilla, 2 tazas de leche, queso blanco, cebollín, pimienta y sal al gusto.
Add enough water to a deep pot, cook the beets together with the potato on “high” heat. Add 1 teaspoon of salt to the water, I suggest NOT to remove the skin, this way we will avoid that the vegetables lose their consistency during the cooking process.
Agregamos suficiente agua a una olla honda, cocinamos a fuego "alto" las remolachas junto con la patata. Añadimos 1 cucharadita de sal al agua, les sugiero NO extraer la piel, de ésta forma evitaremos que las verduras pierdan su consistencia durante el proceso de cocción.

Add the milk, blend at “high” speed until a smooth and homogeneous texture is obtained. If you think it is TOO thick, you can add a little milk until you get the right consistency.
Esperamos que se enfríen un poco para extraer la piel, cortamos en cubos, integramos al vaso de la licuadora o procesador. Añadimos la leche, licuamos a velocidad "alta" hasta conseguir una textura suave y homogénea. Si consideran que está MUY espesa pueden colocar pequeños toques de leche, hasta conseguir la consistencia adecuada.
Add a touch of olive oil and 1 teaspoon of butter to a non-stick frying pan and sauté the chives (season with salt and pepper). Sauté until golden... Add half of the chives together with a touch of grated white cheese, mix until well integrated. In this step we adjust the salt.
Incorporamos a un sartén antiadherente un toque de aceite de oliva junto con 1 cucharadita de mantequilla, sofreímos el cebollín (salpimentamos). Salteamos hasta que se doren... Integramos la mitad del cebollín junto con un toque de queso blanco rallado, mezclamos hasta integrar bien. En éste paso ajustamos el punto de sal.
