I've always loved the combination of rice and fried plantains, but I wanted to try something that is a bit different this time. Instead of serving them separately, I decided to include ripe plantain cubes directly into my jollof rice. And since we had some leftover ripe plantains, it was the perfect opportunity to experiment with a simple yet flavorful twist on a classic dish. Using a few available ingredients, I created this colorful and delicious meal. I'll share how I made it in this post. I'll start by listing the ingredients and their quantities.
Ingredients
2 cups of rice
1 ripe Plantain
2 carrots
4 tomatoes
6 pepper
1 onion
1 cooking spoon vegetable oil
6 pieces of green beans
Salt to taste
First step was to parboil the rice. While it is boiling we move to the next step:
Alice onions, carrots, green beans, tomatoes and the plantain in cubes.
Then I grind the pepper using a mortar
Once the rice is well parboiled an little bit soft, we sieve it and wash it and set aside.
Next put a pot to heat and add oil to it. Add onion and allow it to saute, and then the tomatoes
Stir properly till the water in the tomatoes dries up a bit. Then add the pepper to it and keep stirring
I make some space by the side and add the plantain cubes to fry a bit.
I then take it out and set it aside:
Next I add water to the mixture
Add the green beans
Add Cinnamon powder
Then the rice, stirr properly and cover it to cook down
After a few minutes the rice is ready. Add the plantain cubes and carrots to it, stir in properly and it is ready to be served!
It turned out really nice. This simple twist on jollof rice turned out to be a delicious and satisfying meal! The sweetness of the ripe plantain complemented the rich, spicy tomato base so well and I love it. . It was a fun way to use leftover ingredients and make something unique.
