I am so happy I could achieve this finally.
I started learning this skill few months ago and along the line, I thought I won't be able to make it through. No long story today but I promise to gist you all in details about everything when I graduate in few weeks to come.
I was at home during my off day Thursday this week to be precise and I got a call from a client asking if I will be able to bake a traditional marriage cake and deliver on Saturday being today.
I was happy and I said yes cos it was going to make me learn more things and concepts. We talked about the size of the cake and everything and the price as well, he paid in full.
I quickly went to the cake shop and bought everything I needed.
The following are the things I bought:
- Flour 4kg
- Sugar 2kg
- Egg 1 and a half crate
- Butter 2kg (Taroona)
- Icing sugar 3kg
- Square board 14"
- Big wrap 2 yards
- Small gelatin, Cinnamon, mixed spice, browning and black treacle
- Glucose
- CMC
- Mixed fruit half kg
- Alcohol (One man squad 2 )
- Gold dust
- Gas 3kg
- Baking powder
- Mixed fruit flavour 2 bottles
Since I didn't have any working tools yet I baked and did everything in my madam's house.
Below are the procedures 👇
- I washed my hands very well, measured butter and sugar into a clean fry bowl using a scale and creamed it till it was light and fluffy.
- I used the scale to measure flour, baking powder, cinnamon and mixed spice then filter it well.
- I broke the egg into a bowl and turned it
- I added all my wet ingredients into the sugar and butter I creamed and then added egg and flour bit by bit alternating it into 2 by 3 and then turned it.
- I measured the mixed fruits into a bowl using scale and poured in the alcohol to make it look fresh.
- I turned it into the batter I mixed and turned.
- I greased my pan using butter and flour then pour in the batter and baked for 45 minutes and thereabout.
After my cake was ready, I removed it and allow it cool before trimming and leveling. I mixed fondant well using glucose, CMC, gelatin and water.
I nidded it well and started my decoration. I covered the cake first using wrapping method and I covered the board too. I used moulder to mould garden egg, kolanut and beads.
I used the fondant to make bracelets, a small plate to contain the kolanut and garden egg and necklace too.
I allowed it dry and then pasted them on the cake. I used alphabet cutters to write the name of the couple as instructed.
After every every, this is what It looked like. Achieving this wasn't easy but I did it and presented it to the couple. That's how a traditional cake looks like over here in Akwa Ibom State, Nigeria though there are other designs.
