Good evening hivers how are you? I was quite well today, I ran many errands but unfortunately my husband isn't feeling very well with his back and a bit of toothache, luckily there are painkillers!
Tonight I asked him if he preferred to eat something soft but as an Italian DOC he absolutely wanted pasta! So I decided to use one of his favorite ingredients, dried tomatoes!
A simple but effective pasta, suitable for everyone, even children.
For this pasta I used:
- 150 grams of penne
- 450 ml of tomato sauce
- 80 grams of dried tomatoes in oil
- six tablespoons of salt
- four tablespoons of olive oil
- 1 teaspoon nutmeg
- 1 teaspoon of chilli
Ingredients easily available in almost all kitchens in Italy.
First I prepared a pan with two tablespoons of oil to fry for a minute and poured the tomato sauce onto a plate with another tablespoon of oil on top and three tablespoons of fine salt, mixing oil, salt and sauce.

Para esta pasta utilicé:

- seis cucharadas de sal
- cuatro cucharadas de aceite de oliva
- 1 cucharadita de nuez moscada
- 1 cucharadita de chile
Ingredientes fácilmente disponibles en casi todas las cocinas de Italia.
Primero preparé una sartén con dos cucharadas de aceite para sofreír un minuto y vertí la salsa de tomate en un plato con otra cucharada de aceite encima y tres cucharadas de sal fina, mezclando aceite, sal y salsa.

Then we add the seasoned sauce to the pan and fry for three minutes, take the dried tomatoes, if you want you can cut them into small pieces or leave them whole like I did because my husband likes them better that way, add them to the sauce and mix, they continue to cook , add the chilli pepper and nutmeg, if you like it spicier you can add more spoons of chilli pepper, let it cook for another ten minutes, stirring.
In the meantime, drain the pasta and put it back in the pan with the remaining spoonful of oil, mixing it, then take the sauce and put it directly in the pan with the pasta, mix well and cook over low heat for two minutes. Now the pasta is ready to be served, tasty, simple and genuine! If you want, you can also add a few basil leaves to give it a more Mediterranean flavor!

Preparamos también una olla con agua a hervir y con las cucharadas restantes de sal, donde luego echaremos la pasta en cuanto hierva.
Luego agregamos a la sartén la salsa sazonada y sofreímos por tres minutos, tomamos los tomates secos, si quieres puedes cortarlos en trozos pequeños o dejarlos enteros como lo hice yo porque a mi marido le gustan más así, los agregas a la Salsa y mezcla, se continúa cocinando, agrega la guindilla y la nuez moscada, si te gusta más picante puedes agregar más cucharadas de guindilla, deja cocinar por otros diez minutos, revolviendo.
Mientras tanto escurrimos la pasta y la volvemos a poner en la sartén con la cucharada restante de aceite, mezclándola, luego tomamos la salsa y la ponemos directamente en la sartén con la pasta, mezclamos bien y cocinamos a fuego lento durante dos minutos. ¡Ahora la pasta está lista para servir, sabrosa, sencilla y genuina! Si quieres, ¡también puedes añadir unas hojas de albahaca para darle un sabor más mediterráneo!
